Position Overview

The Hygiene Supervisor at Al Zorah Beach Resort monitors and maintains food safety and hygiene standards across all kitchens, food preparation areas, restaurants, storage facilities, and other food handling areas. You will carry out routine hygiene inspections and internal audits against HACCP principles, local regulations, and resort standards; check food storage, temperature control, labelling, date marking, and stock rotation; identify hygiene risks and follow up on corrective and preventive actions; maintain HACCP documentation, temperature logs, and cleaning schedules; coordinate with Culinary, Stewarding, F&B, and Engineering; deliver food safety and hygiene training; oversee cleaning, sanitisation, chemical use, and pest control; support incident and guest complaint investigations; assist with external inspections and certification; and promote a resort-wide culture where food safety is everyone’s responsibility.

Why This Role Matters: In a luxury resort, guests expect beautiful food and complete peace of mind. One missed temperature check, mislabelled allergen, or lapse in cleaning can harm a guest and damage a reputation built over years. As Hygiene Supervisor, you are the person who quietly prevents that — by spotting risks early, guiding teams with respect and clarity, and turning HACCP principles into daily habits across every kitchen and outlet. Your work protects guests, supports the culinary teams, and strengthens the resort as it moves toward its Four Seasons future.

Risk Identification, CAPA & Documentation

  • Identify hygiene risks, document non-compliance, and follow up on corrective and preventive actions until they are properly closed
  • Maintain HACCP documentation, inspection records, temperature logs, cleaning schedules, and other food safety records so they are always accurate and audit-ready
  • Prepare hygiene inspection reports, communicate findings clearly, and recommend practical improvements that kitchen and outlet teams can actually apply

Training, Culture & Cross-Department Coordination

  • Deliver food safety and hygiene training — covering personal hygiene, cross-contamination prevention, allergen awareness, and safe food handling
  • Verify that food handlers comply with personal hygiene standards and training requirements
  • Coordinate with Culinary, Stewarding, F&B, and Engineering teams to resolve hygiene-related concerns quickly and constructively
  • Promote a culture of food safety awareness and accountability throughout the resort

Sanitation, Chemicals & Pest Control

  • Monitor cleaning and sanitisation procedures, chemical usage, and pest control activities to confirm they are carried out correctly and on schedule
