Key Responsibilities
Production Operations & Scheduling
- Lead and manage day-to-day dairy manufacturing and processing operations across all production lines at the Fujairah facility
- Plan and execute production schedules in line with business demand, sales forecasts, and customer delivery requirements
- Oversee the full production of cheese, kefir, yogurt, fermented dairy products, and other value-added dairy products
- Manage production teams, shift operations, manpower allocation, and production line efficiency to meet all output targets
Product Development, Formulation & Scale-Up
- Drive recipe formulation, new product development, production trials, and commercial scale-up of innovative dairy products
- Ensure consistent product quality, taste, texture, shelf life, and batch specifications across all production runs
- Support new product launches, production readiness, and the introduction of innovative specialty dairy products to the UAE market
- Collaborate with R&D, Commercial, and QA teams to translate product concepts into scalable, commercially viable dairy products
Efficiency, Cost Control & Continuous Improvement
- Monitor production yields, raw material utilisation, operational costs, waste levels, and equipment performance closely
- Identify and implement opportunities for process optimisation, cost reduction, and continuous improvement across dairy operations
- Optimise yields and manufacturing efficiency while maintaining the highest standards of product quality and food safety
- Coordinate with Engineering and Maintenance teams to ensure equipment reliability and minimise unplanned production downtime
Food Safety, Compliance & Cross-Functional Coordination
- Ensure full compliance with HACCP, GMP, ISO 22000, FSSC 22000, food safety, hygiene, and applicable UAE regulatory standards
- Coordinate closely with Quality Assurance, Engineering, Maintenance, Supply Chain, and Commercial teams across the business
- Support internal and external food safety audits — ensuring production records and documentation are complete and audit-ready
- Champion a strong food safety culture across the production team — ensuring all staff follow hygiene and GMP procedures consistently
Qualifications & Requirements
Educational Requirements
- Bachelor’s degree in Dairy Science / Dairy Technology, Food Science / Food Technology, Food Engineering, Chemical Engineering, or related discipline
- Additional certification in FSSC 22000, ISO 22000, HACCP lead auditor, or dairy technology specialisation is a valued advantage
Experience Requirements
- Minimum 8 years of experience in dairy or food manufacturing — including at least 3 years in a production supervisory or management role
- Strong hands-on experience in dairy processing — cheese, kefir, yogurt, fermented dairy products, and other specialty dairy manufacturing
- Demonstrated experience in recipe formulation, product development, and commercial production scale-up in a food or dairy setting
- Good technical knowledge of dairy processing technologies, production equipment, and manufacturing processes
