Key Responsibilities
As a Food Safety Specialist in Dubai, you will be responsible for the following critical duties:
Regulatory Compliance & Standards Management
- Ensure strict compliance with UAE food safety regulations, Dubai Municipality standards, and internal company quality protocols
- Stay updated on changes to local and international food safety legislation and implement necessary adjustments
- Serve as the primary liaison with regulatory authorities during inspections and compliance reviews
Auditing & Site Inspections
- Conduct comprehensive branch audits and site visits across multiple restaurant locations in Dubai
- Perform detailed inspections of food handling practices, storage conditions, hygiene protocols, and equipment sanitation
- Identify non-conformances and implement corrective and preventive actions (CAPA)
Reporting & Documentation
- Prepare detailed incident reports for food safety events and quality deviations
- Generate weekly and monthly reports summarizing audit findings, training completion, laboratory results, and compliance status
- Maintain accurate and up-to-date records for regulatory inspections and certification audits
Training & Capability Development
- Deliver engaging food safety and quality training sessions to kitchen staff, servers, and management teams
- Develop and update training materials, presentations, and standard operating procedures (SOPs)
- Manage outsourced employee training programs including Person in Charge (PIC), Basic Food Hygiene (BFH), First Aid, and Fire Safety certifications
HACCP & ISO Systems Management
- Review, update, and maintain HACCP plans and critical control point (CCP) monitoring systems
- Ensure ISO food safety management systems are properly implemented and regularly reviewed
- Conduct internal audits to verify HACCP and ISO compliance across all branches
Laboratory Coordination & Testing
- Coordinate and follow up on laboratory testing programs for food samples, water quality, and surface swabs
- Review laboratory results and take immediate action on adverse findings
- Maintain relationships with accredited testing laboratories and manage testing schedules
Documentation & Manual Updates
- Update branch documents, manuals, and quality records in coordination with Kitchen Managers (KMs)
- Ensure all documentation aligns with current food safety standards and best practices
- Implement version control systems for quality management documents
Required Qualifications & Experience
The ideal candidate for this food safety specialist job in Dubai will meet the following requirements:
Educational Requirements
- Bachelor’s degree in Food Science, Food Technology, Food Safety, Microbiology, or a closely related field
- Additional certifications in HACCP, ISO 22000, or food safety auditing are highly preferred
Experience Requirements
- 2–3 years of proven experience in food safety and quality assurance roles within Dubai, UAE
- Previous experience in the restaurant industry, food service operations, or hospitality sector is highly preferred
- Demonstrated experience conducting food safety audits and implementing corrective actions
- Familiarity with UAE food safety regulations, Dubai Municipality requirements, and international food safety standards
Technical Skills
- Strong knowledge of HACCP principles, Critical Control Points (CCPs), and food safety risk assessment
- Proficiency in ISO 22000 or other food safety management systems
- Ability to interpret laboratory test results and take appropriate corrective actions
- Excellent report writing and documentation skills
- Competency in Microsoft Office Suite (Word, Excel, PowerPoint) for reporting and presentations
