Key Responsibilities

Preventive Quality Control & Daily Quality Monitoring

  • Support the implementation of preventive quality control checks across all stages of Calo’s food production cycle — from incoming raw material inspection through in-process production monitoring to finished product quality verification before dispatch — ensuring that potential quality and food safety issues are identified and addressed proactively before they reach customers
  • Generate daily quality scores and highlights for production operations — collecting, compiling, and presenting quality monitoring data in a format that gives production management and the quality team a clear, real-time picture of quality performance, emerging trends, and priority areas requiring immediate attention or corrective action
  • Monitor operations that affect product quality and food safety — observing and evaluating production processes, equipment conditions, environmental controls, personal hygiene practices, and raw material handling in real time, and implementing preventive measures promptly when conditions or practices are identified that could create quality or food safety risks
  • Inspect procedures throughout the full production cycle to ensure efficiency and compliance with quality standards — evaluating process adherence against approved standard operating procedures, identifying deviations, and coordinating immediate corrective action when production activities deviate from the established quality and food safety framework

HACCP, BRCGS, AIB & Food Safety Programme Management

  • Implement and maintain Calo’s HACCP food safety management system — ensuring that hazard analyses are current and accurate, Critical Control Points are correctly identified and monitored, CCP monitoring records are completed accurately on schedule, and all HACCP documentation is maintained in audit-ready condition for regulatory inspection, BRCGS certification audit, or AIB International assessment
  • Support compliance with BRCGS (Brand Reputation through Compliance Global Standards) and AIB International food safety standards — maintaining awareness of current standard requirements, supporting internal gap assessments against both standards, and contributing to the implementation of improvements that advance Calo’s compliance status and audit performance
  • Implement and maintain food safety programmes including sanitation programmes, temperature monitoring logs, cleaning and disinfection schedules, pest control documentation, personal hygiene compliance records, and allergen management procedures — ensuring that all food safety programme elements are active, consistently applied, accurately documented, and regularly reviewed for effectiveness
  • Ensure compliance with all local UAE governmental food safety and quality regulations applicable to Calo’s central kitchen and food production operations — maintaining current knowledge of Dubai Municipality and UAE food safety regulatory requirements, and proactively updating internal food safety procedures and compliance monitoring activities when regulatory requirements change

Supplier Quality Assurance Audits

  • Conduct Supplier Quality Assurance (SQA) audits at Calo’s raw material and ingredient suppliers — evaluating supplier food safety management systems, hygiene standards, HACCP implementation, product quality controls, and regulatory compliance against Calo’s supplier quality requirements and applicable food safety standards
  • Prepare detailed, structured SQA audit reports — documenting audit findings clearly, classifying non-conformances by severity, proposing required corrective actions, and sharing audit results with relevant internal stakeholders including procurement, operations, and quality management teams
  • Follow up on supplier corrective actions identified through SQA audits — monitoring the implementation and effectiveness of agreed supplier improvements within required timeframes, and escalating persistent supplier quality non-conformances to management for procurement decision-making
  • Maintain Calo’s supplier quality documentation — including approved supplier lists, supplier audit records, supplier quality performance data, and certificate of analysis records — ensuring that all supplier quality information is current, accurate, and accessible for internal quality management and external audit purposes

Customer Complaint Investigation, CAPA & Non-Conformity Management

  • Investigate customer complaints related to product quality, food safety, or hygiene — following a structured investigation process that includes complaint logging, product trace and sample retention review, production record evaluation, process observation, and root cause analysis using systematic quality investigation methodology
  • Investigate production non-conformities and quality defects — identifying recurring problems across materials, production processes, and finished products, conducting thorough root cause analysis to determine underlying systemic causes, and developing corrective and preventive action plans that address root causes rather than symptoms
  • Support the implementation of corrective and preventive actions (CAPA) — coordinating with production, procurement, and operations teams to ensure that agreed CAPA actions are clearly assigned, implemented within required timelines, and verified as effective through follow-up quality monitoring or re-inspection
  • Assure the reliability and consistency of production by monitoring processes and finished products against defined quality specifications — identifying quality defects and food safety issues promptly, recommending appropriate corrective actions, and tracking the resolution of identified quality issues through to verified closure

Quality Reporting, Audits & Documentation

  • Maintain comprehensive records of quality reports, statistical reviews, inspection results, HACCP monitoring data, SQA audit findings, corrective action records, and all other quality management documentation — ensuring that all records are accurate, complete, correctly filed, and immediately accessible for internal management review, regulatory inspection, or certification audit
  • Generate weekly and monthly quality performance reports and scorecards — presenting quality KPI data clearly and accurately, identifying trends in quality performance and food safety compliance, and providing management with the actionable quality intelligence needed to drive continuous improvement across Calo’s production operations
  • Ensure all required internal audits, inspections, and quality activities are completed regularly, documented accurately, and submitted on time — maintaining the audit schedule, coordinating audit activities with production and operations teams, and preparing professional audit reports with clearly defined action plans

Food Safety Training & Quality Culture Development

  • Train and educate production teams on food safety practices, HACCP principles, personal hygiene requirements, allergen awareness, cleaning and sanitation procedures, and any other food safety topics relevant to their operational roles — delivering training that is practical, engaging, and genuinely changes food safety behaviour across Calo’s fast-paced kitchen and production environment
  • Support the implementation of policies and procedures that improve day-to-day operations — developing accessible, operationally relevant SOPs, food safety checklists, and quick reference guides that empower production team members to maintain food safety and quality standards independently and consistently

Qualifications & Requirements

Education

  • Bachelor’s degree in Food Science, Microbiology, Chemistry, Biotechnology, Biological Sciences, or any other relevant food safety or life science discipline — a relevant degree is a mandatory qualification requirement for this Food Quality Specialist role at Calo

Experience Requirements
