Position Overview

This Food Safety Officer role involves complete responsibility for highest level of sanitation and hygiene standards at luxury resort. You will ensure all food served meets safety standards, implement HACCP procedures, manage Critical Control Points, conduct food safety training, maintain comprehensive documentation, perform regular audits, and coordinate with multiple departments to maintain food safety excellence in high-end hospitality environment.

Key Responsibilities

Personal Hygiene & Staff Management

  • Implement and ensure personal hygiene standards across all food handling staff
  • Update and maintain staff medical records
  • Verify records of reported sickness of food handlers and status of health checkups
  • Conduct refresher training for food handlers regularly

Critical Control Points (CCP) Implementation

  • Implement and ensure Critical Control Points procedures throughout operations
  • Evaluate corrective actions and monitor effectiveness
  • Verification of CCP records and receiving records
  • Implement cooking control points and storage/serving control points

Premises & Facility Management

  • Implement and ensure premises Critical Control Points
  • Coordinate Engineering & F&B preventive maintenance lists
  • Develop and implement action plans for rectification
  • Conduct regular tours of back of house with Executive Chef, Chief Steward, and Duty Engineer
  • Weekly kitchen walk-through to review minutes and outstanding issues

Delivery, Storage & Food Preparation

  • Implement and ensure delivery and storage Critical Control Points
  • Maintain tracking system for control of supplier operating licenses
  • Daily checklist by shift for chiller temperature control
  • Control dry store food preparation processes
  • Implement preparation and storage cooking control points

Training & Development

  • Lead involvement in Food Safety training for food handlers
  • Evaluate efficiency of training from chemical suppliers
  • Conduct monthly FSMS meetings, trainings, audits and briefings
  • Provide orientation briefings on food safety procedures

Documentation & Compliance

  • Implement and ensure comprehensive checklists for food preparation, storekeeper, cost control, stewarding, food production
  • Prepare monthly food safety training reports and lab test reports
  • Match receiving records with health certificates for imported items
  • Conduct food sampling and follow up for original certificates
  • Gather relevant information for any alleged food borne illness cases
  • Ensure completion of internal monthly audits

Qualifications & Requirements

Educational Requirements

  • Food Science degree or related education
  • OR Microbiology degree
  • OR Chemistry degree
  • OR other related education in food safety or health sciences

Experience Requirements

  • Prior experience working in high-risk environment
  • Formal qualification in occupational health and safety or related field, OR commensurate experience
  • Sound knowledge of Health and Safety CCP procedures and workplace application
  • Proven experience in worker engagement, contractor management, incident management
  • Experience in training and competency, risk management, machinery safety
  • Knowledge of hazardous substances, traffic management, audit programs, occupational hygiene
