Core Responsibilities of Seafood Quality Assurance Officers
Daily Quality Control Operations
Incoming Raw Material Inspection:
- Evaluate freshness and quality of incoming seafood deliveries
- Check fish and shellfish for proper handling and temperature
- Verify supplier compliance with quality specifications
- Document receipt inspection findings and rejections
Processing Quality Monitoring:
- Supervise cleaning, filleting, and processing operations
- Monitor hygiene standards throughout production areas
- Ensure proper seafood handling techniques by staff
- Verify correct packaging and labeling procedures
Cold Chain Management:
- Monitor refrigeration and freezing equipment performance
- Track temperature logs for storage and processing areas
- Ensure blast freezing protocols are properly followed
- Verify cold storage compliance for different seafood types
Food Safety and Compliance Management
HACCP Implementation:
- Apply Hazard Analysis Critical Control Points principles
- Monitor critical control points in seafood processing
- Document corrective actions for deviations
- Maintain HACCP compliance records
Regulatory Compliance:
- Follow Dubai Municipality food safety regulations
- Implement UAE food safety standards and guidelines
- Ensure compliance with export destination requirements
- Maintain proper documentation for inspections and audits
Hygiene and Sanitation Oversight:
- Conduct facility sanitation inspections daily
- Monitor employee hygiene and personal protective equipment
- Verify cleaning and sanitization schedule compliance
- Prevent cross-contamination between raw and processed products
Laboratory Testing and Analysis
Microbiological Testing:
- Conduct or coordinate bacterial contamination tests
- Monitor pathogen control (Salmonella, E.coli, Listeria)
- Track total viable count and specific spoilage organisms
- Ensure seafood meets microbiological safety standards
Physical and Chemical Analysis:
- Test for heavy metals and contaminants
- Monitor histamine levels in susceptible fish species
- Check moisture content and water activity
- Verify salt content and preservative levels
Sensory Evaluation:
- Assess seafood freshness using sensory methods
- Evaluate color, odor, texture, and appearance
- Identify signs of spoilage or quality deterioration
