 Position Overview

This Assistant Restaurant Manager role involves assisting in the daily supervision of restaurant and bar operations at Le Royal Méridien Abu Dhabi, a prestigious Marriott International luxury property. You will support menu planning, maintain sanitation and food safety standards, assist servers and hosts during peak meal periods, handle employee questions and concerns, monitor team performance, communicate with the Chef and Restaurant Manager regarding food quality and service levels, manage alcohol beverage compliance, achieve or exceed budgeted goals, open and close restaurant shifts, and consistently strive to improve both guest satisfaction and employee engagement.

 Key Responsibilities

Restaurant Team Management & Leadership

  • Handle employee questions, concerns, and day-to-day operational requests professionally
  • Monitor employees continuously to ensure performance expectations are consistently met
  • Provide constructive feedback to team members based on direct observation of service behaviors
  • Assist in supervising daily shift operations across restaurants and bar outlets
  • Supervise all restaurant areas in the absence of the Director or Restaurant Manager
  • Participate in departmental meetings communicating clear goals and desired results

Day-to-Day Restaurant Operations

  • Ensure all employees have proper supplies, equipment, and uniforms before each shift
  • Communicate food quality issues and service level concerns to Chef and Restaurant Manager
  • Ensure full compliance with all restaurant policies, standards, and operating procedures
  • Monitor alcohol beverage service maintaining compliance with local UAE laws and regulations
  • Manage operations to achieve or exceed budgeted financial goals and targets
  • Open and close restaurant shifts ensuring smooth handovers and accurate reporting

Exceptional Guest Service Delivery

  • Interact directly with guests to obtain real-time feedback on food quality and service
  • Supervise staffing levels ensuring guest service, operational needs, and financial objectives are met
  • Encourage and motivate employees to consistently provide excellent customer service
  • Handle guest problems and complaints swiftly, seeking supervisor assistance when needed
  • Set a consistently positive example for guest relations across the entire restaurant team
  • Meet and greet guests warmly creating authentic Le Méridien first impressions

Training, Coaching & Human Resources

  • Supervise ongoing training initiatives using all available on-the-job training tools
  • Communicate performance expectations clearly in line with job descriptions for each position
  • Coach and counsel employees regarding performance standards on a continuous basis
  • Identify training needs to accomplish departmental goals and implement development plans

Quality, Sanitation & Standards Management

  • Maintain and enforce sanitation standards across all restaurant and bar areas
  • Recognize good quality food products and presentations aligned with Le Méridien standards
  • Assist with menu planning ensuring alignment with brand’s European-inspired culinary identity
  • Review comment cards and guest satisfaction results with team to drive continuous improvement

 Qualifications & Requirements

Educational Requirements — Option A

  • High school diploma or GED with 4 years of experience in food and beverage, culinary, or related area
  • Proven track record in restaurant or hospitality operations management environment

Educational Requirements — Option B

  • 2-year degree from accredited university in Food Service Management, Hotel and Restaurant Management
  • Degree in Hospitality, Business Administration, or closely related major accepted
  • Minimum 2 years of experience in food and beverage, culinary, or related professional area

Essential Skills & Competencies

  • Strong leadership and supervisory skills for managing diverse multicultural restaurant teams
  • Excellent guest service orientation with genuine passion for hospitality and dining experiences
  • Clear and effective communication skills across all organizational levels
  • Ability to analyze information, evaluate results, and choose best solutions to operational problems
