Position Overview

Key Result Areas
Ingredient Forecasting & Estimated Monthly Consumption
- Prepare and distribute Estimated Monthly Consumption (EMC) reports for raw ingredients across EK Economy, EK Premium, FZ, OAL, CPK, and all lounges, events, and festive menus to Supply Chain, Sourcing Solutions, and Culinary stakeholders
- Ensure all EMC outputs are accurate, timely, and aligned with current production schedules, menu rotations, and seasonal volume changes — preventing supply shortages across the operation
- Develop and maintain buffer standards based on historical consumption data and demand variability analysis — providing a safety net against supply disruptions in the production flow
- Analyze passenger forecasts using the CAT360 digital platform, incorporating historical data trends to continuously refine buffer standards and improve forecasting accuracy across all airline clients
Material Resource Planning — CAT360, ERP & Multi-Airline Operations
- Run the full Material Resource Planning (MRP) system for EK Economy, EK Premium, OAL, Fly Dubai, Lounges, CPK, and commercial F&B services — ensuring optimal raw material procurement and uninterrupted production flow
- Verify the accuracy of CAT360-generated forecasts and master data regularly — providing timely coaching and guidance to the planning team to ensure alignment with multi-airline production requirements
- Supervise the daily flight schedule and master data management — including meal presentation details, airline specifications, menu rotation cycles, and loading scales — coordinating with EK In-Flight Services (IFS) and internal stakeholders
- Proactively identify and resolve MRP exceptions, forecast deviations, and data discrepancies to prevent production delays, waste, and procurement inefficiencies across the operation
Master Data Management — Item Codes, BOM & Yield Management
- Lead the Standards and Specifications team in creating and managing comprehensive master data — including item codes and Bill of Materials (BOM) — for Flight Catering Solutions (FCS) across all airline clients
- Enforce rigorous food product standards through disciplined BOM analysis, ensuring all ingredient specifications, portion sizes, and yield assumptions are accurate and current
- Implement timely yield management through ongoing BOM review and operational adjustments that reflect actual kitchen yields, recipe changes, and ingredient substitutions
- Validate master data accuracy through systematic review processes — ensuring item codes, BOMs, and specifications are aligned with financial records and production requirements for accurate cost reporting
SOPs, ISO 9001:2008 Compliance & Team Training
- Develop and implement Standard Operating Procedures (SOPs) for planning and forecasting processes — ensuring all team activities are governed by clear, documented, and consistently followed operational standards
- Conduct team training on planning SOPs, system processes, and quality standards — building team capability and ensuring consistent, high-quality operational performance across the Standards and Specifications function
- Ensure full compliance with EKFC’s quality policy and ISO 9001:2008 standards by monitoring department performance and implementing corrective measures when quality benchmarks are not met
- Lead cost-benefit projects by conducting feasibility studies, cost comparison analyses, and product specification reviews to optimize resource allocation, improve operational efficiency, and support strategic business decisions
Qualifications & Requirements
Educational Requirements
- Bachelor’s degree in Hospitality Management, Food Science, or a related discipline — required for this Assistant Manager role at Emirates Flight Catering
- Certification in Supply Chain Management, Master Data Management, or Material Resource Planning (MRP) is preferred and will be given priority consideration
- ISO 9001:2008 certification training or relevant quality management training is preferred — candidates with active ISO 9001 credentials are strongly encouraged to apply
Experience Requirements
- Minimum 6 years of professional experience in a mass food production environment, with demonstrated expertise in production planning, ingredient forecasting, or specifications management
- 6+ years of ISO 9001 experience is a specific requirement for this role — candidates must be able to demonstrate active, hands-on ISO 9001:2008 compliance management experience
- Previous experience using an ERP system within the Hospitality or Food Service industry — particularly for MRP, master data management, or BOM administration
