Position Overview
This Food Safety Officer / Food Hygiene Inspector role involves conducting regular food hygiene and safety inspections for Lumee Restaurant LLC / Lumee Catering Services LLC in Ras Al Khaimah. You will monitor kitchen, storage, and food preparation areas, ensure compliance with HACCP and food safety procedures, check food temperatures, storage conditions, and expiry dates, monitor staff personal hygiene and food-handling practices, identify hygiene risks and recommend corrective actions, and maintain accurate food safety and inspection records.

Key Responsibilities
Hygiene Inspections & Monitoring
- Conduct regular food hygiene and safety inspections across all operations
- Monitor kitchen, storage, and food preparation areas for compliance
- Check food temperatures, storage conditions, and expiry dates
- Monitor staff personal hygiene and food-handling practices
HACCP & Compliance Management
- Ensure compliance with HACCP and food safety procedures at all times
- Identify hygiene risks and recommend appropriate corrective actions
- Support management during municipality and external inspections
- Follow up to ensure corrective actions are completed on schedule
Documentation & Reporting
- Maintain food safety and inspection records accurately and consistently
- Prepare daily, weekly, and monthly inspection reports
- Document non-conformities and track corrective action follow-up
- Support internal hygiene inspection documentation and audit trails
Staff Training & Communication
- Conduct staff food safety and hygiene training sessions
- Communicate hygiene standards clearly across kitchen and service teams
- Guide staff on personal hygiene, food handling, and sanitation practices
- Foster a culture of food safety awareness throughout the operation
Qualifications & Requirements
Educational Requirements
- Relevant academic qualification in Food Safety, Food Science, Microbiology, Public Health, Hospitality Management, or a related field
- Food Safety / Food Hygiene Level 3 or Level 4 qualification, or equivalent recognized certification
Experience Requirements
- Minimum 2-3 years of relevant practical experience in food safety, hygiene inspection, restaurant, catering, hotel, or food production operations
- Experience conducting regular kitchen, storage, food preparation, and staff hygiene inspections
Technical Knowledge
- Strong knowledge of HACCP principles and implementation
- Food safety management systems, personal hygiene, and food handling
- Kitchen sanitation, cleaning procedures, and temperature control
- Cross-contamination prevention, pest control, and waste management
- Food safety documentation, records, and internal hygiene inspections
Essential Skills
- Ability to identify non-conformities, prepare inspection reports, and follow up on corrective actions
