Position Overview
The FSQA Specialist at this leading UAE hospitality organization is a comprehensive food safety and quality assurance role that spans the full FSMS lifecycle across multiple assigned properties. You will conduct HACCP internal audits, supplier audits, and surveillance inspections, deliver structured food safety training and coaching programs, monitor wireless temperature systems and ATP hygiene verification tools, investigate food safety incidents and product recalls using root cause analysis, and maintain all HACCP documentation and quality monitoring records. Key Responsibilities
FSMS Implementation & Continuous Improvement
- Support the implementation, maintenance, and continual improvement of the Food Safety Management System (FSMS) across all assigned hospitality properties in the UAE
- Ensure full compliance with company food safety policies, HACCP requirements, and applicable UAE food safety regulations — including ADAFSA standards — across every assigned property
- Monitor property-level food safety performance, analyze quality data and trends, and support properties in implementing effective corrective and preventive actions
- Identify food safety risks, system gaps, and opportunities for improvement through regular inspections and ongoing performance monitoring across all assigned sites
Food Safety Inspections & Audits
- Conduct comprehensive food safety inspections, HACCP internal audits, supplier audits, and surveillance audits in strict accordance with approved annual audit plans
- Prepare clear, structured, and actionable audit and inspection reports that accurately document findings, risk ratings, root causes, and corrective action requirements
- Follow up on all audit and inspection findings to verify that agreed corrective actions are implemented fully, on time, and effectively across all assigned properties
- Coordinate and support third-party, customer, and regulatory authority audit visits — including ADAFSA inspections — as required across hospitality properties
Food Safety Training & Coaching
- Design, develop, and deliver structured food safety and HACCP training programs, coaching sessions, and food safety awareness initiatives across assigned hospitality properties
- Build food safety culture and competency at all levels — from kitchen staff and food handlers through to supervisors and department managers
- Coach and mentor operational teams on HACCP principles, food hygiene best practices, corrective action implementation, and continuous improvement mindset
Monitoring Systems, Verification & Documentation
- Monitor and verify food safety monitoring systems across properties — including wireless temperature monitoring systems and ATP hygiene verification equipment — ensuring all data is accurately recorded and acted upon
- Maintain and verify HACCP documentation, food safety monitoring logs, verification records, and all supporting quality management documentation to a high standard of accuracy and completeness
- Ensure traceability records, monitoring logs, and verification activities are maintained in full compliance with HACCP plans and ADAFSA regulatory requirements
Incident Investigation & Root Cause Analysis
- Investigate food safety incidents, customer complaints, and product recall events using structured root cause analysis methodologies to determine the true origin of failures
- Recommend and implement appropriate corrective and preventive actions (CAPAs) to address identified root causes and prevent recurrence of food safety incidents
- Maintain detailed, accurate investigation reports and ensure all incident findings, corrective actions, and closure evidence are properly documented for regulatory and internal review
Qualifications & Requirements
Educational Requirements
- Bachelor’s Degree in Microbiology, Food Science, Food Technology, Nutrition, or a closely related scientific discipline
- Professional certifications in HACCP Implementation, HACCP Auditing, and Food Hygiene are mandatory for this role
Experience Requirements
- Minimum 5–8 years of hands-on food safety and quality assurance experience within large-scale hospitality, hotel, or food service operations
- Extensive experience conducting food safety inspections, HACCP internal audits, supplier audits, incident investigations, and delivering food safety training programs
