Position Overview

This Hygiene Manager role carries ownership of food safety and sanitation for an entire luxury property during its opening phase and daily operations. You will oversee hygiene, sanitation, and food safety standards in line with regulations and FAENA requirements, manage HACCP procedures and food safety management systems, and plan and run hygiene inspections, audits, and risk assessments in preparation, storage, and service areas. You will watch food handling, storage, cleaning, and sanitation practices and follow up on gaps, coordinate microbiological testing, water quality checks, and other monitoring, and investigate incidents through to corrective and preventive action. You will also deliver food safety and hygiene briefings and training, keep accurate records, audit findings, and supporting documents, coordinate preparations for authority inspections and external audits, and update management on hygiene performance and key risks. Supporting pre-opening preparations so procedures are ready before the first guest arrives is central to the job.

Why This Role Matters: In a luxury hotel, a single hygiene lapse harms guests and the brand at once. As Hygiene Manager, you build and maintain the systems that keep every kitchen, store, and service area safe — before opening day and every day after.
