Position Overview

The Quality Controller at this leading Dubai seafood company is a full-time, on-site quality control and food safety compliance role responsible for monitoring, inspecting and verifying product quality and safety across seafood operations — ensuring all products, processes and facilities meet HACCP, GMP, GHP and applicable food safety and hygiene standards. With 3–4 years of mandatory seafood industry QC experience, the successful candidate brings direct, practical knowledge of seafood quality control protocols, seafood-specific food safety risks and the regulatory compliance requirements of the UAE seafood industry — contributing to the company’s commitment to delivering safe, high-quality seafood products to its Dubai and GCC customers.

Why This Role Matters: Seafood is one of the most food safety-sensitive product categories in the food industry — temperature control failures, cross-contamination, improper storage and inadequate HACCP compliance in a seafood processing or distribution environment can have immediate and serious consequences for consumer health. As the Quality Controller at this leading Dubai seafood company, your expertise, vigilance and seafood-specific quality knowledge are the food safety shield that stands between the production process and the consumer — protecting every Dubai family, restaurant and retailer that depends on this company for safe, high-quality seafood products.

 Key Responsibilities

Seafood Quality Inspection & Testing

  • Conduct comprehensive quality inspections of incoming raw seafood materials, in-process products and outgoing finished seafood goods — verifying compliance with quality specifications, freshness criteria, sensory standards and documented product specifications at every stage of the production or distribution process.
  • Perform or oversee microbiological and chemical quality checks relevant to seafood products — monitoring for pathogens, chemical contaminants and physical hazards that present food safety risks in seafood processing and handling environments.
  • Monitor and verify cold chain integrity, temperature controls and storage conditions across all seafood holding, processing and dispatch areas — ensuring compliance with food safety temperature requirements that protect seafood product quality and consumer safety.
  • Identify, document and segregate non-conforming seafood products promptly — applying rigorous non-conforming product management procedures to prevent substandard or unsafe seafood from progressing through the supply chain or reaching end consumers.

HACCP, GMP & GHP Compliance

  • Implement, monitor and verify HACCP (Hazard Analysis and Critical Control Points) protocols across all seafood processing and handling operations — ensuring that critical control points are actively monitored, correctly documented and that corrective actions are taken immediately when CCPs are exceeded.
  • Ensure strict compliance with GMP (Good Manufacturing Practice) and GHP (Good Hygiene Practice) standards throughout the seafood facility — monitoring personnel hygiene, equipment cleanliness, sanitation procedures and facility condition against established GMP and GHP requirements.
  • Maintain comprehensive, accurate and audit-ready quality and food safety documentation — including inspection records, HACCP monitoring logs, non-conformance reports and corrective action records in compliance with the company’s quality management system requirements.

Reporting, Corrective Actions & Continuous Improvement

  • Report quality deviations, food safety incidents and hygiene non-conformances promptly and accurately — providing quality management with timely, fact-based documentation that enables rapid investigation and corrective action implementation.
  • Participate in internal quality audits, external inspections and regulatory compliance reviews — representing the company’s commitment to seafood food safety standards and providing auditors with complete, well-organized documentation and operational transparency.
  • Contribute to continuous improvement of seafood quality control procedures — identifying recurring quality issues, analyzing root causes and recommending practical, science-based corrective measures that strengthen the company’s seafood quality and safety performance in Dubai.

Qualifications & Requirements

Mandatory Experience

  • 3–4 years of experience specifically within the seafood industry in a Quality Control, Quality Assurance or Food Safety role — this is a firm, mandatory requirement. Candidates with food industry experience outside the seafood sector will not be considered for this Dubai role.

Educational Requirements

  • Bachelor’s degree in Food Science, Food Technology, Microbiology or a closely related food safety or biological sciences discipline — providing the scientific foundation required for effective HACCP, GMP and GHP compliance in a seafood quality control role.
