Position Overview – Food Technologist, Emirates

As a Food Technologist within Emirates’ Food & Beverage Design team, you will play a vital role in developing and validating innovative food products and production processes for inflight dining services. This position combines culinary excellence with scientific precision, ensuring every Emirates meal meets the highest standards for quality, safety, Halal compliance, and customer satisfaction across all cabin classes and global routes.

The Food & Beverage Design team is responsible for critical functions including menu development, recipe standardization, equipment selection, amenities planning, and catering logistics for Emirates’ extensive network serving millions of passengers annually. You will work at the intersection of food science, culinary innovation, and operational excellence in one of aviation’s most sophisticated catering operations.

Key Responsibilities & Core Duties

  • Technical Product Development Support: Provide specialist technical expertise to product and process design initiatives, ensuring complete alignment with Halal compliance requirements and food safety standards as guided by Emirates’ Food Safety & Halal Compliance team
  • Food Science and Sensory Optimization: Apply advanced food science principles and sensory evaluation expertise in collaboration with award-winning chefs and culinary development teams to assess and optimize critical sensory attributes including taste profiles, aroma characteristics, texture properties, and visual appearance while ensuring recipes meet rigorous quality standards
  • Process Design and Validation: Design, develop, and validate comprehensive product-level processes to guarantee recipe integrity, quality consistency, and food safety compliance during large-scale production, specialized reheating procedures, and high-altitude serving conditions unique to aviation catering
  • Technical Documentation Management: Maintain meticulous technical documentation and detailed product specifications encompassing complete recipe development records, standardized preparation methods, precise ingredient measurements, critical control point identification, and comprehensive process validation records supporting regulatory compliance
  • Ingredient Innovation and Evaluation: Evaluate and recommend innovative ingredient alternatives based on technical suitability assessments, innovation potential, sustainability considerations, cost efficiency analysis, and quality enhancement opportunities, providing expert technical input to support strategic decision-making
  • Production Monitoring and Optimization: Partner closely with the Concept Development team as a technical specialist to conduct first batch productions, monitor production line performance metrics, identify process optimization opportunities, and implement continuous improvement initiatives
  • Capability Development and Training: Drive continuous improvement and staff capability development through comprehensive training programs, data-driven analysis, implementation of best practices, and proactive alignment with evolving regulatory requirements and Halal certification standards
  • Recipe Standardization for Scale: Lead recipe standardization and upscaling initiatives for high-volume commercial aviation catering, ensuring consistency, quality retention, and operational efficiency when scaling from small-batch development to large-scale production serving thousands of meals daily

Required Qualifications & Educational Background

  • Academic Credentials: Bachelor’s Degree or Honours degree (12+3 years or equivalent) in Food Technology, Food Science, Food Engineering, Culinary Science, Nutrition, or closely related discipline from accredited university
  • Industry Experience: Minimum 5 years of proven professional experience specifically in inflight service operations or inflight catering environments, with demonstrated expertise in aviation food service challenges and solutions
  • Recipe Development Expertise: Comprehensive experience in food technology, recipe development methodologies, formulation science, and demand planning utilizing industry-standard tools including SAP, SpecPage, Nutritics, ESHA Genesis, ChefTec, Apicbase, MasterCook, ReciPal, and similar platforms
  • Commercial Catering Experience: Proven track record in recipe standardization and upscaling for commercial or institutional catering operations, menu management systems, recipe creation workflows, and strategic planning processes
  • Production Technology Knowledge: Hands-on experience with cook/chill technology in high-volume food production environments, understanding of batch cooking systems, blast chilling procedures, and regeneration techniques
  • Aviation Catering Expertise: Demonstrated experience in airline catering operations including understanding of altitude-based reheating constraints, galley equipment limitations, temperature control challenges, and flight duration considerations
  • Technical Software Proficiency: Working knowledge of specialized food technology software including ComBase Predictor for microbial modeling, SAFEFOOD 360 for food safety management, and TA.XTPlus for texture analysis, CompuSense and EyeQuestion for sensory evaluation, and LIMS (Laboratory Information Management Systems)
