Key Responsibilities
Hygiene, Health & Safety Compliance
- Ensure full and ongoing compliance with all hygiene, health and safety, and food safety regulations applicable to Abu Dhabi hotel operations — including ADAFSA standards, UAE health authority requirements, and the hotel’s internal compliance policies
- Conduct regular, systematic hygiene inspections and operational audits across all hotel departments — including kitchen areas, food storage, restaurants, housekeeping, maintenance, and public areas — identifying and resolving compliance gaps promptly
- Monitor and enforce food safety standards throughout all food production, storage, handling, and service operations — ensuring that temperature controls, cross-contamination prevention, and personal hygiene requirements are consistently maintained
- Coordinate with operational departments on all corrective actions arising from hygiene inspections and audits — following up to verify effective resolution and prevent recurrence of identified compliance issues
HACCP Documentation & Food Safety Management
- Maintain comprehensive and accurate HACCP documentation, compliance records, inspection logs, and corrective action files — ensuring all food safety documentation is current, well-organized, and available for regulatory review at all times
- Monitor Critical Control Points (CCPs) and food safety procedures across kitchen and food service operations — ensuring all HACCP requirements are consistently implemented and documented by food handling staff on every shift
- Maintain sanitation records, temperature logs, pest control documentation, and all other required food safety compliance records — ensuring full traceability and audit readiness across all hotel food safety functions
- Review and update the hotel’s HACCP plans, food safety procedures, and hygiene SOPs as required — ensuring all documentation accurately reflects current operations and regulatory requirements
Training Delivery & Food Safety Culture
- Design and deliver regular hygiene and food safety training programs for all hotel team members — covering HACCP principles, personal hygiene, food handling procedures, sanitation standards, and emergency response protocols
- Conduct on-the-job coaching and food safety awareness sessions across hotel departments — building a genuine culture of hygiene accountability and food safety compliance among all team members at every level
- Maintain accurate training records for all staff hygiene training activities — documenting attendance, assessment outcomes, and certification renewals in accordance with ADAFSA and hotel compliance requirements
- Ensure all food handling staff hold current and valid food handler training certifications as required by ADAFSA and Abu Dhabi health authority regulations — managing renewal scheduling proactively
Authority Liaison & Audit Readiness
- Liaise professionally and competently with ADAFSA inspectors, Abu Dhabi Municipality representatives, and other local government authorities during all facility inspections, routine audits, and regulatory visits
- Ensure the hotel maintains complete readiness for ADAFSA inspections and local authority audits at all times — proactively identifying and resolving compliance gaps before regulatory visits
- Prepare comprehensive post-inspection reports, audit responses, and regulatory correspondence — representing the hotel’s food safety and hygiene function with professionalism and full regulatory knowledge
- Monitor regulatory developments and updates from ADAFSA and Abu Dhabi health authorities — proactively updating hotel hygiene procedures and training materials to reflect any changes in regulatory requirements
Key Requirements
Mandatory Experience & Certification
- Previous experience as an EHS, Hygiene, or Health & Safety Officer within hotels in Abu Dhabi — this is a mandatory requirement; experience in other UAE emirates or GCC hotels without specific Abu Dhabi hotel experience may not be sufficient
- Fully certified and approved by relevant Abu Dhabi government authorities to perform the Hygiene Officer role — ADAFSA approval is non-negotiable and all applicants must hold current, valid ADAFSA certification before applying
