Position Overview
The Food Quality Specialist at Calo in Dubai supports the company’s full food safety and quality assurance operations — from preventive quality control checks and daily quality scoring to supplier quality audits, customer complaint investigation, root cause analysis, and HACCP programme maintenance. You will monitor production processes, implement corrective actions, generate weekly and monthly quality performance reports, and train teams on food safety best practices. With strong knowledge of HACCP, BRCGS, AIB International standards, and UAE food safety regulations, you will be a trusted quality advocate who helps ensure Calo’s customers consistently receive safe, high-quality, healthy meals they can rely on.

Key Responsibilities
Preventive Quality Control & Daily Monitoring
- Support the implementation of preventive quality control checks across all production stages — generating daily quality scores and highlights that keep management informed of real-time quality performance
- Monitor all operations that affect product quality and food safety — identifying deviations, non-conformances, and risk indicators before they develop into serious quality failures
- Follow established inspection procedures to identify and report quality issues across incoming materials, work-in-progress, and finished Calo products
- Implement preventive measures to minimise food safety and quality hazards — ensuring Calo’s products are consistently produced using high-quality materials and well-functioning processes
Food Safety Programme Implementation — HACCP & Standards
- Implement and maintain all food safety programmes, objectives, policies, and procedures — including HACCP plans, sanitation programmes, temperature monitoring logs, and cleaning schedules
- Ensure full compliance with HACCP, BRCGS, AIB International (AIBI) standards, and all UAE local governmental food safety and quality regulations
- Ensure all required audits, inspections, and quality activities are completed regularly and submitted to relevant stakeholders on time without exception
- Ensure all products, processes, and work environments comply with legal, regulatory, and food safety requirements applicable to Calo’s operations in the UAE
Supplier Quality AssuranceAudits
- Conduct Supplier Quality Assurance (SQA) audits across Calo’s ingredient and packaging supplier base — systematically evaluating supplier food safety and quality compliance
- Share SQA audit findings clearly and promptly with relevant internal stakeholders — driving supplier improvement actions and protecting the integrity of Calo’s ingredient supply chain
- Monitor supplier performance over time — identifying recurring issues, escalating systemic risks, and supporting the development of preferred supplier qualification criteria
Customer Complaint Investigation & Corrective Actions
- Investigate all customer complaints and quality non-conformities thoroughly — conducting structured root cause analysis to identify the underlying source of each quality or safety issue
- Support the design and implementation of corrective and preventive actions — ensuring every identified issue is resolved sustainably and recurrence is effectively prevented
- Identify quality defects, food safety issues, and recurring operational problems — recommending appropriate corrective actions to management with evidence-based analysis
- Track the effectiveness of corrective actions implemented — verifying that improvements deliver genuine, measurable quality outcomes over time
Quality Reporting, Records & Documentation
- Maintain accurate, complete, and organised records of quality reports, statistical reviews, inspection findings, and all relevant quality documentation
- Generate clear, insightful weekly and monthly quality performance reports and scorecards — providing management with the data needed to make informed quality improvement decisions
- Assure the reliability and consistency of Calo’s production by continuously monitoring processes and finished products against approved quality specifications
- Maintain all food safety documentation to audit-ready standard — ensuring full traceability, version control, and compliance evidence across HACCP and BRCGS records
Team Training & Food Safety Culture
- Train and educate kitchen, production, and operations team members on food safety practices — building genuine understanding of why each practice matters, not just compliance for inspection purposes
- Support the implementation of food quality initiatives, goals, and objectives across the Calo operational team — embedding quality ownership at every level of the business
- Ensure all work environments are maintained in a safe, clean, and hygienic condition — conducting regular hygiene and sanitation verification inspections
- Project a positive, professional image of Calo’s quality standards to employees, customers, industry partners, suppliers, and the broader community
Qualifications & Requirements
Education
- Bachelor’s Degree in Food Science, Microbiology, Chemistry, Biotechnology, Biological Sciences, or another relevant scientific discipline
- Additional food safety certifications — HACCP, BRCGS Internal Auditor, AIB, or equivalent — are a significant professional advantage for this role
Experience Requirements
- Minimum 3 to 4 years of hands-on experience in Quality Assurance and Food Safety within food manufacturing, central kitchen, catering, or food production environments
- Experience working in a fast-paced food production or central kitchen environment is highly preferred — comfort with high output and time-pressured quality decisions is essential
- Locally available UAE-based candidates are preferred — candidates from outside the UAE may also be considered subject to visa availability
Knowledge & Standards
- Good understanding of AIB International (AIBI) and BRCGS food safety and quality standards — practical implementation experience is essential
- Good knowledge of local UAE food regulatory and statutory requirements — familiarity with relevant authority inspection processes and compliance expectations
- General knowledge of quality assurance methodologies — including HACCP, GMP, sanitation verification, temperature control, and food safety management systems
