Key Responsibilities
Food Safety Compliance — Dubai Municipality & HACCP Oversight
- Ensure full compliance with the Dubai Municipality Food Code, HACCP principles, and ISO 22000 food safety management system requirements across all food handling, preparation, storage, display, and service operations at Oaks Ibn Battuta Gate Hotel — monitoring every area where food is handled against the applicable regulatory and company food safety standard
- Conduct regular, structured food safety inspections across all hotel food operations — including main kitchen, pastry kitchen, cold store and dry store facilities, room service preparation areas, restaurant service areas, banqueting and events catering spaces, and pool and outdoor food service points — evaluating hygiene practices, HACCP CCP monitoring, temperature control, allergen management, and pest prevention at every point
- Monitor HACCP Critical Control Point records daily — verifying that CCP monitoring activities have been completed on schedule, that all results are within approved limits, and that any CCP deviation has been correctly managed with the required corrective action and documentation according to the hotel’s HACCP plan
- Manage the hotel’s food safety checklists, monitoring records, and digital food safety documentation system — ensuring that all records are completed accurately in real time, filed correctly, and immediately accessible for Dubai Municipality inspection, internal audit, or management review at any time
Internal Audits & Corrective Action Management
- Plan and conduct internal food safety audits across all hotel food and beverage operational areas — evaluating compliance with Dubai Municipality requirements, HACCP plans, food safety SOPs, and ISO 22000 standards — and preparing professionally written audit reports that clearly identify non-conformances, their severity, and required corrective actions
- Monitor the implementation of corrective actions identified through inspections, internal audits, Dubai Municipality inspections, and guest complaint investigations — following up with relevant department heads and team members to verify that agreed actions are implemented within required timeframes and that their effectiveness is confirmed through follow-up assessment
- Maintain a comprehensive corrective action log — tracking all outstanding food safety non-conformances, their assigned owners, target completion dates, and closure status — and reporting corrective action progress to F&B management and the hotel’s General Manager on the agreed reporting cadence
- Support the hotel’s preparation for Dubai Municipality routine inspections and unannounced food safety visits — ensuring facilities, records, HACCP documentation, and team practices are at inspection-ready standard at all times and that the hotel consistently receives compliant or commendable inspection outcomes
Food Safety Training — Dubai Municipality Approved Train the Trainer
- Plan, develop, and deliver Dubai Municipality-approved food safety training programmes to hotel food handlers at all levels — utilising the Train the Trainer certification to conduct formal, regulatory-compliant food safety training that meets Dubai Municipality requirements for food handler education and certification across hospitality food operations
- Create and maintain a structured annual food safety training calendar — ensuring that all new food handler joiners receive required food safety induction training within the required timeframe, that all existing food handlers complete annual refresher training, and that training completion records are accurately maintained and current
- Deliver practical, engaging, and operationally relevant food safety and hygiene training that actually changes food handler behaviour — not just training that satisfies a compliance checkbox, but training that builds genuine food safety competence and a shared sense of responsibility for guest health and food safety across the kitchen and restaurant teams
- Assess training effectiveness through follow-up workplace observation, hygiene inspection results, and compliance monitoring data — identifying any remaining knowledge or behaviour gaps that require additional targeted training intervention and adapting training content and delivery approach to address recurring food safety issues
Documentation, Reporting & Food Safety Culture
- Maintain accurate, comprehensive, and audit-ready food safety documentation across all hotel food operations — including HACCP monitoring records, temperature logs, cleaning and disinfection schedules, pest control records, supplier documentation, staff training records, and all other documentation required by Dubai Municipality, HACCP, and ISO 22000 standards
- Utilise digital food safety documentation systems and Microsoft Office tools — including Excel for data analysis and KPI tracking, Word for report preparation, and PowerPoint for training presentations — to maintain, analyse, and present food safety performance data with professional accuracy and clarity
- Prepare regular food safety performance reports for hotel management — covering inspection outcomes, training completion rates, corrective action status, Dubai Municipality compliance, and any food safety risks or improvement priorities that require management attention or resource allocation

Education & Certifications
- Degree or diploma in Food Science, Food Safety, Microbiology, or a closely related field — a relevant academic qualification is required for this Food Safety & Hygiene Supervisor role
