Key Responsibilities
Food Safety Compliance Monitoring & Inspections
- Ensure that all food handling, storage, processing, and distribution activities across Central Traders’ Dubai operations comply fully with UAE food safety regulations, Dubai Municipality food safety standards, applicable GCC regulatory requirements, and the company’s own internal food safety policies and procedures
- Conduct regular, structured inspections of warehouse facilities, food storage areas, production and processing operations, and transport vehicles — evaluating hygiene practices, temperature control, stock rotation, pest prevention measures, personal hygiene compliance, and HACCP monitoring activities at every stage of the food supply chain
- Verify adherence to HACCP principles and food safety management systems across all operational areas — checking that Critical Control Points are being monitored correctly, that CCP monitoring records are accurate and current, and that deviation procedures are being followed promptly when CCP limits are exceeded
- Conduct risk assessments across food handling and distribution operations — systematically identifying food safety hazards, evaluating existing controls, and recommending additional control measures that reduce identified risks to acceptable levels in line with HACCP and ISO 22000 principles
Food Safety Policy Development & Documentation
- Develop, implement, and regularly update food safety policies, procedures, and Standard Operating Procedures (SOPs) — ensuring that all food safety documentation accurately reflects current regulatory requirements, industry best practices, and the specific food safety challenges and risks associated with the company’s commodity trading, warehousing, and distribution operations
- Maintain accurate, comprehensive, and audit-ready records of all food safety inspections, monitoring activities, training sessions, CAPA actions, and regulatory correspondence — ensuring complete traceability and documentation integrity across all food safety management activities
- Prepare detailed reports for internal management review, internal audits, and external regulatory body inspections — compiling food safety performance data, inspection findings, compliance status summaries, and CAPA closure tracking in clear, professionally presented formats that give management and regulators full visibility of food safety performance
- Stay continuously updated on changes to UAE food safety regulations, Dubai Municipality requirements, Gulf Standards Organization (GSO) food standards, and relevant international food safety standards — proactively updating company food safety procedures and compliance monitoring activities to ensure ongoing regulatory currency
Staff Training & Food Safety Culture Development
- Develop and deliver food safety training programmes for warehouse staff, food handlers, logistics personnel, and management teams — covering HACCP principles, personal hygiene requirements, correct food handling and storage practices, allergen management, temperature monitoring, pest awareness, and emergency response procedures relevant to each team’s operational role
- Guide and coach staff on the practical application of food safety best practices in their daily work — providing accessible, operationally relevant guidance that builds genuine food safety competence and not just procedural awareness across all levels of the organisation
- Assess training effectiveness through observation, practical evaluation, and follow-up compliance monitoring — identifying any knowledge or behaviour gaps that require additional training intervention and adapting training content to address recurring food safety compliance issues
- Champion a proactive food safety culture across Central Traders’ Dubai operations — building an organisational environment where food safety concerns are reported immediately, corrective actions are taken seriously, and every team member understands their personal role in protecting the safety of the food products the company handles and distributes
Non-Conformity Investigation, CAPA & Supplier Coordination
- Investigate food safety non-conformities and customer complaints related to product quality or food safety — conducting thorough root cause analysis, gathering relevant operational and testing data, and preparing accurate, well-structured investigation reports that identify the underlying cause and support effective corrective action
- Coordinate the development and implementation of Corrective and Preventive Actions (CAPA) with quality assurance, operations, logistics, and supplier teams — ensuring that agreed actions are practical, clearly assigned, implemented within required timeframes, and verified as effective through follow-up monitoring or testing
- Liaise with suppliers regarding food safety compliance requirements — reviewing supplier food safety documentation, coordinating supplier audits where required, and managing food safety-related communication with international and local food brand principals and commodity suppliers
- Coordinate with Dubai Municipality and other relevant UAE regulatory authorities on food safety inspection activities, product registrations, and regulatory compliance requirements — ensuring that all regulatory submissions and responses are accurate, timely, and professionally presented
Internal Audits & Continuous Improvement

- Support external regulatory inspections by Dubai Municipality and other UAE food safety authorities — ensuring that facilities, documentation, and operational practices are inspection-ready at all times, and coordinating the company’s timely, accurate response to any regulatory inspection findings
- Drive continuous improvement of food safety processes across the organisation — analysing inspection trends, audit findings, CAPA data, and customer complaint patterns to identify systemic food safety risks and implementing improvement initiatives that measurably raise food safety performance across Central Traders’ operations
