The Food Safety & Quality Control Officer position at Shada Sea Hotel offers a pivotal role in ensuring guest safety and operational excellence. You’ll monitor food safety and hygiene standards, maintain HACCP documentation and compliance, conduct regular inspections and audits, train operational staff, and ensure adherence to food safety regulations and company standards. Key Responsibilities & Quality Assurance Duties
Food Safety & Hygiene Monitoring
- Monitor food safety and hygiene standards across all kitchen and food handling areas
- Ensure proper food storage, temperature control, and handling procedures
- Verify food freshness, expiration dates, and proper labeling protocols
- Conduct daily hygiene checks of kitchen equipment and food preparation surfaces
- Monitor staff compliance with personal hygiene and sanitation procedures
- Identify and address food safety risks and contamination hazards
HACCP Documentation & Compliance Management
- Maintain comprehensive HACCP (Hazard Analysis Critical Control Points) documentation
- Ensure HACCP system implementation and adherence across food operations
- Document critical control points and monitoring activities regularly
- Maintain HACCP records for regulatory review and verification
- Update HACCP plans based on operational changes and audit findings
- Ensure corrective actions are implemented when critical limits are exceeded
Inspections, Audits & Quality Assessment
- Conduct regular inspections of kitchen, storage, and food preparation areas
- Perform comprehensive food safety audits of all food service operations
- Assess compliance with internal quality standards and procedures
- Document inspection findings and create action plans for deficiencies
- Conduct internal audits ensuring GMP (Good Manufacturing Practices) compliance
- Generate quality assurance reports documenting findings and recommendations
Staff Training & Guidance
- Train operational staff on food safety and hygiene procedures
- Guide kitchen and food handling staff through proper protocols
- Conduct food safety awareness and training programs
- Educate staff on HACCP principles and critical control points
- Provide mentorship on food safety best practices and regulations
- Support new employee orientation on food safety requirements
Regulatory Compliance & Documentation
- Ensure compliance with food safety regulations and government standards
- Maintain adherence to company food safety standards and procedures
- Prepare for external health inspections and regulatory audits
- Maintain comprehensive documentation of all food safety activities
- Create incident reports for food safety issues or violations
- Communicate with regulatory authorities as required
Supplier Management & Source Control
- Verify supplier compliance with food safety standards
- Inspect incoming food deliveries for quality and safety
- Maintain supplier audits and quality certifications

Qualifications & Requirements
Professional Experience Requirements
- Proven experience in Food Safety / QA-QC (Quality Assurance-Quality Control)
- Demonstrated experience with HACCP systems and implementation
- Background in food safety management and quality assurance
- Previous experience in food service or food production operations
- Track record of maintaining food safety compliance standards
Industry & Hospitality Experience
- Hospitality or hotel industry experience highly preferred
- Hotel food and beverage operations background advantageous
- Experience in restaurant or catering food safety management
- Familiarity with hotel food service and culinary operations
Technical Knowledge & Certifications
- Expert knowledge of HACCP (Hazard Analysis Critical Control Points)
