Position Overview

The Food Safety Specialist at Emirates Flight Catering in Dubai carries out spot verifications through internal shop floor inspections, monitors food safety performance via internal audit review and customer complaint analysis, prepares trend analyses and cascades findings to stakeholders, conducts on-site local food supplier audits and e-audits for overseas suppliers, investigates critical food safety complaints and supplier issues, performs microbiological analysis, maintains ISO 17025 laboratory accreditation requirements, supervises and guides the food safety team across all assistant and supervisor levels, ensures CCPs, OPRPs and PRPs are monitored and verified per the Hazard Control Plan, participates actively in HACCP reviews during NPD and process changes, and assists in food safety audits conducted by airline and commercial customers — while supporting the Food Safety Manager and Senior Food Safety Manager on daily operational and continual improvement requirements.

Why This Role Matters: At Emirates Flight Catering, the Food Safety Specialist is the technical professional protecting the food safety of millions of airline meals served to passengers of Emirates and partner airlines around the world — from the moment a raw material supplier is audited through to the moment a meal tray is loaded onto an aircraft. In a catering operation that produces at extraordinary volume and serves passengers across more than 150 global destinations, every CCP monitored, every supplier audit completed, every microbiological result verified and every HACCP review conducted by this specialist is a direct contribution to the food safety of passengers who trust Emirates with their meals at 35,000 feet. The stakes in airline catering food safety are uniquely high — and the professionals who manage them are among the most highly regarded food safety experts in the global aviation industry.

 Key Responsibilities

Shop Floor Inspections & Food Safety Performance Monitoring

  • Carry out spot verification through internal inspections on the Emirates Flight Catering shop floor — systematically checking compliance with food safety procedures, GMP standards, personal hygiene requirements and critical control point monitoring across all production, assembly and dispatch areas, and communicating findings accurately through structured shift reports to operational and food safety management.
  • Monitor the Food Safety performance of stakeholders at the assigned Emirates Flight Catering business units — reviewing internal audit results, customer complaint data and operational performance indicators to prepare rigorous trend analyses and cascade actionable food safety performance insights to the relevant stakeholders for continuous improvement.

Food Supplier Auditing — On-Site & E-Audit

  • Conduct comprehensive on-site audits at local food suppliers serving Emirates Flight Catering as per the set audit frequency — systematically evaluating supplier HACCP implementation, GMP compliance, food safety management systems and hygiene standards against Emirates Flight Catering’s stringent supplier approval and monitoring criteria.
  • Conduct rigorous e-audits (electronic/remote audits) for all assigned overseas food suppliers — adapting the audit methodology to remote delivery while maintaining the depth, technical rigour and documentation standards required to effectively assess overseas supplier food safety management systems and protect Emirates Flight Catering’s global supply chain integrity.
  • Investigate critical food safety-related customer complaints and food safety issues with suppliers — applying structured root cause analysis methodology to identify the true underlying causes of food safety failures, implement immediate risk mitigation and develop sustainable preventive actions that prevent recurrence across the Emirates Flight Catering supply chain.

Microbiological Analysis & ISO 17025 Laboratory Management

  • Perform microbiological analysis as per the assignment schedule — applying validated, ISO 17025-compliant testing methods to food products, environmental monitoring samples, water samples and other laboratory inputs, generating accurate, reproducible microbiological safety data that informs Emirates Flight Catering’s food safety risk management decisions.
  • Ensure that all ISO 17025 certification requirements are appropriately maintained in the Emirates Flight Catering food safety laboratory — proactively supporting method validation, equipment calibration, proficiency testing participation, internal audit preparation and documentation management activities that sustain the laboratory’s accreditation status and analytical credibility.

HACCP Management, Team Supervision & Airline Customer Audit Support

  • Supervise and guide Food Safety Supervisors, Senior Food Safety Assistants and Food Safety Assistants on all food safety-related matters at Emirates Flight Catering — providing technical direction, hands-on coaching and professional mentorship that builds team capability and ensures consistent, high-standard food safety practice across all shifts and operational areas.
  • Ensure CCPs, OPRPs and PRPs established in the Hazard Control Plan are continuously monitored and verified as per the plan — supervising the food safety team’s CCP monitoring activities with the rigor, consistency and technical accuracy that Emirates Flight Catering’s production volume and airline customer standards demand across every production shift.
  • Take an active part in HACCP reviews during new in-flight product development, changes in existing catering processes and introduction of new production processes — contributing food safety technical expertise to ensure all new and modified products and processes are appropriately hazard-analysed, controlled and documented from the earliest development stages.
  • Assist in food safety audits conducted by airline and commercial customers at Emirates Flight Catering — providing professional technical support, comprehensive documentation and transparent operational access that enables smooth, efficiently managed external audits and demonstrates Emirates Flight Catering’s full compliance with airline customer food safety standards and requirements.
