Overview: Quality Control Officer

The Quality Control Officer (Quality Controller) is responsible for frontline inspection and verification of food quality, temperature control, packaging standards, and hygiene compliance during daily operations at FITT Meals. Working closely with the Food Safety and Quality Management System (FSQMS) team, this role ensures that all products meet internal quality specifications, customer expectations, and food safety standards before dispatch.

The Quality Control Officer acts as a critical checkpoint between meal production and delivery operations, identifying and escalating deviations in real time to prevent non-conforming products from reaching customers. This hands-on role requires constant vigilance, attention to detail, and proactive communication with production, compliance, and dispatch teams.

Key Responsibilities

As Quality Control Officer at FITT Meals Dubai, your comprehensive responsibilities include:

Portioning & Product Quality Checks

  • Perform visual and physical inspections of meals during and after portioning to verify quality standards
  • Ensure consistency in portion sizes, ingredient accuracy, and overall meal presentation across all meal plans
  • Verify that each meal contains the correct protein, carbohydrate, vegetable, and garnish components as per specifications
  • Confirm label accuracy matches the actual meal contents and menu specifications for each batch
  • Check for ingredient freshness, color consistency, and proper cooking/preparation methods
  • Identify any visual defects including burnt items, undercooked proteins, wilted vegetables, or presentation issues
  • Ensure meals meet nutritional targets and dietary specifications (macros, allergen-free, special diets)

Temperature & Packaging Control

  • Take and accurately record temperatures of cooked meals immediately after production
  • Monitor and document temperatures of refrigeration units, blast chillers, and cold storage areas
  • Verify dispatch cooler temperatures meet cold chain requirements before loading meals
  • Inspect packaging integrity including container seals, lid closures, and tamper-evident features
  • Verify proper allergen separation in packaging to prevent cross-contamination
  • Check for damaged, cracked, or improperly sealed containers and initiate rework if necessary
  • Escalate immediately any deviations from critical cold chain parameters (temperature abuse)
  • Ensure proper use of insulated bags, ice packs, and cooling elements for delivery

Hygiene & Prerequisite Program (PRP) Compliance Monitoring

  • Observe and verify hygiene practices on production floor including proper PPE (Personal Protective Equipment) usage
  • Monitor staff compliance with glove changes, handwashing protocols, and hair/beard net usage
  • Conduct spot checks for potential cross-contamination risks between different meal types and allergen categories
  • Identify non-compliant behaviors including jewelry wearing, phone usage in production areas, or improper dress code
  • Report any sanitation lapses, equipment cleanliness issues, or facility hygiene concerns to Compliance Supervisor immediately
  • Verify cleaning schedules are being followed for production equipment, surfaces, and utensils
  • Ensure pest control measures are effective and report any pest sightings or evidence
  • Monitor proper waste segregation and disposal practices throughout production facility

Recordkeeping & Escalation

  • Maintain accurate Quality Control logs with detailed batch information, timestamps, and inspection results
  • Complete batch verification sheets for every production run with all required quality checkpoints
  • Attach photographic evidence of non-conformities, quality issues, or exceptions as required by procedures
  • Document corrective actions taken for any quality deviations or failed inspection points
  • Escalate trends or repeated quality issues to Food Safety Executive or Compliance Supervisor for root cause analysis
  • Prepare daily quality summary reports highlighting pass/fail rates, common issues, and improvement opportunities
  • Contribute to weekly quality meetings with data on quality performance and customer feedback analysis

Batch Release & Dispatch Readiness

  • Provide final visual and compliance clearance of completed meal batches before authorizing dispatch
  • Conduct pre-dispatch inspection of delivery vans ensuring they meet hygiene and temperature requirements
  • Verify dispatch vehicles are clean, properly sanitized, and equipped with functional cooling systems
  • Support rework coordination when batches fail compliance checks requiring repackaging or reprocessing
  • Hold batches from dispatch if critical quality or safety parameters are not met until resolution
  • Coordinate with production team on timing of batch completion to ensure optimal freshness at delivery
  • Assist logistics team in organizing batches by delivery routes while maintaining quality standards

Qualifications & Experience

The ideal candidate for this quality control officer position must meet:

Required Qualifications (MANDATORY)

  • Basic Food Safety Training: Completed certification from recognized food safety training provider (REQUIRED)
  • Understanding of food safety principles including HACCP, GMP (Good Manufacturing Practices), and hygiene protocols
  • Knowledge of safe food handling procedures, temperature control, and cross-contamination prevention

Professional Experience (PREFERRED)

  • 1–2 years of hands-on experience in quality control or food handling roles within food production, catering, or meal preparation facilities
  • Previous experience in commercial kitchen, central kitchen, meal prep company, or food manufacturing environment
  • Familiarity with chilled food handling, cold chain management, and refrigerated meal storage
  • Practical experience with food inspection, quality checks, and compliance monitoring

Educational Background (DESIRABLE)

  • Bachelor’s degree in Food Science, Food Technology, Microbiology, or related field (desirable but not mandatory)
  • Diploma or certificate in Food Safety, Quality Management, or Hospitality Management
  • Additional food safety certifications such as ServSafe, HACCP, or ISO 22000 awareness
