Position Overview

This Quality Controller (QC) role at Al Mukhtar Bakery’s Sharjah Branch is a full-time, on-site position responsible for ensuring that all bakery products consistently meet the company’s quality, food safety, and hygiene standards across every stage of production and dispatch. You will inspect raw materials on receipt, monitor the production process for consistency, conduct finished product quality checks covering taste, texture, appearance, weight, and packaging, ensure full compliance with HACCP, GMP, and GHP standards, supervise staff hygiene and PPE compliance, conduct daily hygiene inspections, maintain comprehensive QC documentation, record non-conformances and corrective/preventive actions, and train production staff on quality and hygiene procedures. The role also involves supporting municipality and food safety audits, ensuring product labelling and expiry date compliance, investigating customer complaints, and contributing to continuous process improvement initiatives.  Key Responsibilities

Quality Control — Production & Finished Product

  • Inspect raw materials upon receiving — verifying quality specifications, freshness, labelling accuracy, and supplier compliance before any materials enter the production process
  • Monitor bakery production processes continuously to ensure product consistency — checking mixing, baking, cooling, and packaging stages to maintain defined quality standards throughout each production run
  • Conduct quality checks on all finished bakery products before dispatch — evaluating taste, texture, appearance, weight, and packaging integrity against established specifications
  • Identify and report product quality issues, specification deviations, and non-conformances — recommending and tracking corrective actions to prevent recurrence and protect product quality consistency

Food Safety, Hygiene & GMP Compliance

  • Ensure full, documented compliance with HACCP, GMP, and GHP standards across all production and storage areas — maintaining the food safety framework that protects products and consumers at all times
  • Monitor production staff hygiene practices and PPE compliance on a daily basis — coaching, correcting, and documenting hygiene observations to maintain the highest standards of personal food safety conduct
  • Conduct daily hygiene inspections across production, storage, and dispatch areas — documenting findings, identifying risks, and ensuring cleaning and sanitation procedures are followed correctly and on schedule
  • Monitor product storage temperatures, cold chain compliance, and shelf-life management — ensuring all bakery products are stored, rotated, and dispatched in full compliance with food safety requirements

Documentation, CAPA & Compliance Reporting

  • Maintain complete, accurate, and up-to-date QC inspection reports, quality records, and daily monitoring logs — ensuring all documentation is traceable, retrievable, and audit-ready at all times
  • Record all non-conformances and complete Corrective and Preventive Action (CAPA) documentation — tracking each action from identification through implementation and closure verification
  • Ensure compliance with Dubai Municipality, ADAFSA, and applicable UAE food safety regulations — preparing the documentation and operational evidence needed to demonstrate ongoing regulatory compliance
  • Support the company during municipality inspections, food safety authority audits, and internal quality reviews — coordinating documentation access and operational readiness across the production team

Staff Training & Continuous Improvement

  • Train production staff on quality standards, hygiene practices, GMP requirements, and food safety awareness — delivering toolbox talks, onboarding training, and refresher sessions as required
  • Promote a genuine food safety and quality culture across the bakery team — ensuring that every production employee understands their personal responsibility for the safety and quality of the products they handle
  • Investigate customer complaints related to product quality — conducting structured root cause analyses, identifying process gaps, and implementing corrective actions that prevent quality issues from reaching consumers
  • Recommend and support process improvements that reduce waste, improve production consistency, and strengthen the overall quality management system across the Sharjah branch

Qualifications & Requirements

Educational Requirements

  • Diploma or Bachelor’s degree in Food Science, Food Technology, Microbiology, Quality Assurance, or a closely related scientific field — BSc is preferred and required by the job poster
  • HACCP Certification is preferred and will strengthen your application significantly
  • Food Safety Level 2 or Level 3 Certification is required — demonstrating a recognized foundation in food safety management applicable to UAE production environments
  • Knowledge of GMP, GHP, and ISO 22000 is a meaningful advantage and will be seen positively during the selection process

Experience Requirements

  • Minimum 3 to 5 years of hands-on experience as a Quality Controller in a bakery, food manufacturing, or FMCG company — direct production floor QC experience is essential
