Key Responsibilities

  • Manage and control all aspects of day-to-day restaurant operations — ensuring FOH and BOH teams are fully briefed on the day’s requirements, covers, special requests, and service standards before every shift
  • Manage the prompt, efficient, and genuinely courteous serving of food and beverages across both restaurant floors at all times
  • Conduct daily briefings with all staff to ensure smooth running of service sequences and proactive communication of any operational changes or special arrangements
  • Ensure all communication between the restaurant floor and kitchen runs smoothly — coordinating with the Executive Chef on menu execution, timing, and daily specials

Staff Management, Training & HR Coordination

  • Ensure comprehensive training of all staff is completed prior to restaurant opening and refreshed whenever needed to maintain operational excellence standards
  • Schedule working hours for all service staff — factoring in reservation volumes, timetables, and expected business levels — while maintaining daily attendance registers and reporting all absenteeism to HR immediately
  • Ensure all staff are fully informed of disciplinary procedures, grievance handling processes, and company policies — treating every team member fairly and with professional courtesy
  • Keep all time tables, leave rosters, and attendance registers current and fully up-to-date at all times

Pre-Opening Project Coordination

  • Lead all pre-opening phase coordination with all related parties — ensuring the restaurant opening date is reached with full readiness across staffing, training, stocking, menu development, budgets, marketing plans, and all other operational aspects
  • Coordinate with the Executive Chef and bartender for new menu development and the creation of a varied, market-relevant food and beverage offering

Financial Management, P&L & Reporting

  • Take full P&L responsibility for the restaurant — achieving set revenue and sales targets across both operational floors through proactive sales management and cost control
  • Control and analyze departmental costs on an ongoing basis — implementing corrective measures wherever necessary to deliver positive business results against budget
  • Manage all purchasing and supply ordering — ensuring all stock is ordered to the correct quantities, quality specifications, and price — and all delivered orders are properly received and stored
  • Generate weekly, monthly, and quarterly operational reports covering budgets, cost breakdowns, and detailed sales breakdowns by food category, customer profile, menu items, and days of the week
  • Manage tips distribution, monthly inventory control, and all restaurant administration documentation — ensuring all documents are submitted promptly to the accounts department

PR, Marketing & Revenue Growth

  • Own all PR and marketing activities and communications for the restaurant — actively working to maximize brand exposure, drive footfall, and grow sales revenues across both levels of the operation
  • Hold weekly meetings with the Managing Partner to review operations, address any issues, and ensure all special arrangements are properly communicated and planned

Health, Safety & Security Compliance

  • Maintain the required standard of operational hygiene according to cleaning rotas at all times — ensuring full compliance with Dubai food safety and health authority requirements
  • Ensure all direct reports are fully aware of restaurant policies and procedures relating to health, hygiene, fire life safety, and emergency evacuation protocols
  • Ensure all stocks are kept securely and stored under the correct conditions applicable to each type of commodity
