Position Overview
This Food & Beverage Cost Controller role involves controlling and recording the flow of goods between F&B outlets, checking receiving vouchers against supplier invoices and purchase orders, ensuring FTA-compliant tax invoices, producing daily flash cost of sales reports, overseeing stock counts, costing recipes for new menu items, analyzing monthly sales statistics and outlet activity, preparing month-end closing reports, and overseeing hotel store management and stockholding levels.

Key Responsibilities
Cost Control & Receiving
- Control and record the flow of goods between Food and Beverage outlets and issues from stores
- Check receiving vouchers against supplier invoices and purchase orders for accuracy
- Ensure supplier tax invoices are compliant with FTA guidelines
Reporting & Stock Counts
- Produce daily food flash cost of sales reports
- Ensure 10, 20-day and monthly food and beverage stock counts are performed per company policy
- Prepare month-end closing reports for food, beverage, tobacco, general stock and operating supplies
Recipe Costing & Analysis
- Cost all recipes before implementing new dishes to ensure correct pricing
- Analyze monthly sales statistics, highlighting slow-moving items to department heads
- Analyze outlet activity monthly, including revenue, cost of sales and productivity
Store Management & Spot Checks
- Oversee management of hotel stores, ensuring stockholding aligns with business levels
- Perform ad hoc analysis and restaurant spot checks
Qualifications & Requirements
Experience Requirements
- Previous experience in F&B cost control, financial reporting or accounting within hospitality or a related sector preferred
- Experience or training in inventory control, stocktaking procedures and cost accounting is advantageous
Essential Skills
- Strong numerical and analytical skills with attention to detail and accuracy
- Good knowledge of budgeting, variance analysis and inventory valuation methods
- Proficient in Excel and comfortable with accounting or hotel property management systems
- Experience with Sun Systems and/or finance systems advantageous
- Effective communication skills, able to present financial information to non-financial colleagues
- Organised, able to prioritise workload and meet deadlines in a fast-paced environment
- Problem-solving mindset and ability to work independently and as part of a team
Qualifications & Training
- Basic knowledge of financial management, budgets and cost controls
- Sound MS Office skills (Word, Excel, Outlook)
- Relevant accounting or finance qualification
