 Key Responsibilities

Production Quality Inspection & Monitoring

  • Conduct regular and systematic quality control inspections across all bakery and pastry production stages — including raw material intake, in-process production monitoring, and finished product quality verification
  • Monitor production processes continuously for compliance with Nitaaj’s established quality standards, product specifications, and all applicable Saudi food safety and regulatory requirements
  • Identify quality deviations, defects, or non-conformances promptly during production — documenting findings accurately and escalating issues to the Quality In-Charge for immediate resolution
  • Verify that all ingredients, raw materials, and production inputs used in bakery and pastry manufacturing meet the required quality specifications before entering the production process

HACCP, GMP & Food Safety Standards Implementation

  • Implement and monitor HACCP (Hazard Analysis Critical Control Points) standards across all production stages — ensuring all critical control points are identified, monitored, and documented in compliance with Level 3 HACCP requirements
  • Ensure full compliance with GMP (Good Manufacturing Practice) standards throughout the bakery facility — covering hygiene practices, equipment sanitation, personnel standards, and facility maintenance requirements
  • Monitor and enforce food safety and hygiene protocols across all production areas — conducting regular hygiene checks and ensuring all staff follow personal hygiene, dress code, and sanitation standards at all times
  • Support the implementation and ongoing maintenance of Food Safety Level 4 standards — contributing to Nitaaj’s commitment to achieving the highest possible food safety performance across all production operations

Documentation, Reporting & Quality Records

  • Maintain accurate, comprehensive, and up-to-date quality control inspection records and documentation — covering all production checks, hygiene audits, non-conformance findings, and corrective action outcomes
  • Prepare regular quality control reports for review by the Quality In-Charge — covering inspection outcomes, quality metric trends, hygiene compliance status, and recommended improvement actions
  • Ensure all quality documentation is completed, filed, and managed in full compliance with Nitaaj’s quality management procedures and all applicable Saudi food safety regulatory requirements
  • Support quality audit activities — preparing documentation, providing inspection data, and ensuring the production facility is always in a state of quality audit readiness

Team Coordination & Continuous Improvement

  • Collaborate closely with production supervisors, team leaders, and quality management to communicate inspection findings, share quality improvement ideas, and support the resolution of identified quality issues
  • Contribute actively to continuous quality improvement initiatives — identifying recurring quality issues, suggesting practical solutions, and supporting the implementation of corrective and preventive action programs
  • Promote and model a strong food safety culture across the bakery team — encouraging quality awareness, hygiene compliance, and pride in product standards among all production staff
  • Support the onboarding and quality training of new production team members — sharing food safety knowledge and best practices to strengthen quality standards across the growing Nitaaj team
