Food Safety Systems Oversight & HACCP Management
- Oversee and maintain the organisation’s food safety management system across all hotel and catering operations — ensuring HACCP plans are correctly implemented, all Critical Control Points (CCPs) are being monitored as required, CCP monitoring records are accurate and current, and corrective actions are initiated and documented whenever CCP limits are exceeded
- Conduct regular food safety inspections across kitchen, food storage, food preparation, food service, and catering areas — evaluating compliance with HACCP plans, food hygiene standards, temperature monitoring requirements, allergen management procedures, and applicable Abu Dhabi and UAE food safety regulations
- Review and update HACCP documentation — including hazard analyses, CCP determination records, monitoring procedures, corrective action procedures, and verification records — ensuring all food safety documentation accurately reflects current operations and meets the requirements of applicable food safety management system standards
- Support the development and implementation of food safety training for kitchen, food handling, and catering staff — ensuring all food handlers have the knowledge, skills, and awareness to maintain the food safety practices required by the organisation’s HACCP system and Abu Dhabi Municipality food safety standards
Occupational Health & Safety Compliance — NEBOSH Level
- Oversee workplace health and safety compliance across hotel and catering operations — applying NEBOSH IGC-level knowledge to conduct risk assessments, identify workplace hazards, evaluate existing controls, and implement additional control measures that reduce occupational health and safety risks to acceptable levels across all operational areas
- Conduct regular HSE inspections of hotel facilities, catering operations, and support areas — evaluating compliance with UAE occupational health and safety requirements, fire safety standards, chemical handling procedures, manual handling practices, and all other applicable safety regulations relevant to the hospitality sector
- Investigate workplace safety incidents, near-misses, and dangerous occurrences — conducting thorough root cause analysis, preparing detailed incident investigation reports, implementing corrective and preventive actions, and following up to verify effectiveness in preventing recurrence
- Maintain accurate, comprehensive HSE records and compliance documentation — ensuring all risk assessments, inspection reports, incident records, safety training records, permit to work documentation, and regulatory compliance evidence are correctly maintained, up to date, and accessible for management review or Abu Dhabi regulatory inspection
Regulatory Compliance & Authority Liaison
- Monitor compliance with Abu Dhabi Department of Health, Abu Dhabi Municipality, and other relevant UAE regulatory authority requirements applicable to hotel food safety, catering hygiene, and workplace health and safety in the hospitality sector — ensuring the organisation maintains full compliance with all applicable standards and licensing conditions
- Prepare for and support regulatory inspections by Abu Dhabi health, food safety, and environmental authorities — ensuring facilities, documentation, and staff practices are inspection-ready at all times, and coordinating the organisation’s response to any inspection findings within required timeframes
- Develop and maintain compliance checklists, self-inspection tools, and regulatory tracking systems — providing management with timely, accurate information on the organisation’s compliance status across all applicable food safety, occupational health, and environmental regulations
- Stay current on changes to UAE and Abu Dhabi food safety regulations, occupational health and safety legislation, and hospitality sector regulatory requirements — proactively updating internal procedures, training content, and compliance monitoring activities to maintain continuous regulatory currency
Inspections, Audits & Corrective Action Management
- Plan and execute a structured programme of food safety and HSE inspections and internal audits across all relevant hotel and catering operational areas — covering food storage, kitchen operations, food service, staff hygiene practices, equipment maintenance, pest control, cleaning and disinfection, and facility safety conditions
- Identify, document, and prioritise food safety and HSE non-conformances — communicating findings clearly to relevant operational managers, proposing practical and appropriately prioritised corrective actions, and following up to verify that agreed actions are implemented effectively within required timeframes
- Prepare professional inspection reports and audit findings summaries — providing management with clear, accurate, and actionable information on food safety and HSE compliance status, trend analysis, and priority improvement areas across the hospitality operations
