A leading hospitality and food operations company is seeking an experienced and highly motivated Food Safety Manager based in Dubai, UAE. The successful candidate will oversee and maintain the highest standards of food safety, hygiene, and sanitation across all operations — developing HACCP programs, conducting compliance audits, leading regulatory inspections, training staff, and driving a strong food safety culture throughout the entire organisation. Occasional travel is required.

Role Scope — Food Safety Leadership in Dubai

Base Location: Dubai, UAE with occasional travel to other operational sites

Primary Focus: Develop, implement, and manage food safety management systems and HACCP programs

Compliance: Municipality regulations, health authority requirements, and international food safety standards

Audit Leadership: Lead external regulatory audits and internal food safety inspections across all operations

Training: Organise and deliver food safety, hygiene, and sanitation training programs for all employees

Compliance & Standards Framework

HACCP: Hazard Analysis and Critical Control Points — design and maintain full HACCP programs

Local Regulations: Dubai Municipality, DHA, and UAE health authority requirements

International Standards: ISO 22000, FSSC 22000, BRC, and other globally recognised food safety frameworks

Supplier Compliance: Coordinate with purchasing and quality teams to ensure full supplier food safety compliance

Documentation: Maintain accurate, audit-ready food safety records, reports, and corrective action logs

 Key Responsibilities

Food Safety Management Systems & HACCP

  • Develop, implement, and maintain robust food safety management systems aligned with HACCP principles and international standards across all operational sites
  • Design and manage HACCP programs for all food handling, preparation, storage, and distribution activities within the organisation
  • Continuously review and update food safety policies and procedures to reflect changes in legislation, operational practices, and industry best practices
  • Stay fully updated on evolving food safety legislation across the UAE and internationally, proactively integrating new requirements into the organisation’s compliance framework

Audits, Inspections & Regulatory Compliance

  • Conduct regular, thorough internal audits and operational inspections to verify compliance with food safety regulations, company standards, and HACCP critical control points
  • Lead and manage external audits and inspections conducted by Dubai Municipality, Dubai Health Authority (DHA), and other regulatory authorities with full professional preparedness
  • Ensure full, consistent compliance with UAE municipality regulations, health authority requirements, and applicable international food safety standards at all times
  • Monitor food handling, storage, preparation, and sanitation procedures across all departments and operational areas to identify gaps and enforce corrective actions

Incident Investigation & Corrective Actions

  • Investigate all food safety incidents, customer complaints, and non-conformities thoroughly, identifying root causes and implementing effective corrective and preventive actions (CAPAs)
  • Manage product non-conformance processes and coordinate with operations and quality teams to ensure swift, compliant resolution of food safety issues
  • Document all incidents, investigations, corrective actions, and outcomes accurately, maintaining a comprehensive and audit-ready food safety records management system
  • Report food safety performance metrics, incident trends, and compliance status to senior management with clear recommendations for continuous improvement

Staff Training & Food Safety Culture

  • Organise, develop, and deliver comprehensive food safety, hygiene, and sanitation training programs for all employees across operations, kitchen, and service teams
  • Build and sustain a strong, organisation-wide food safety culture by championing best practice behaviours, accountability, and continuous learning at every level
  • Conduct regular refresher training sessions and food safety awareness campaigns to keep compliance knowledge current and operationally embedded
  • Assess training effectiveness through practical evaluations and adjust training content as needed to address identified knowledge or behavioural gaps

Supplier Compliance & Cross-Functional Coordination

  • Coordinate closely with operations, purchasing, and quality teams to ensure all suppliers meet required food safety standards and contractual compliance obligations
  • Conduct or oversee supplier audits and approve new supplier onboarding from a food safety and hygiene compliance perspective
  • Work cross-functionally across departments to embed food safety considerations into procurement, menu development, operations planning, and new site openings
  • Maintain accurate and up-to-date food safety records, documentation, compliance reports, and regulatory correspondence for all operational activities
