Position Overview
As Quality Control Officer at Desert Chill UAE, your core purpose is clear and critical: to ensure that every single product that leaves the facility meets the company’s defined quality standards, food safety requirements, and regulatory compliance benchmarks. You will monitor and document Critical Control Points (CCPs) throughout ice cream production, conduct sensory evaluations for taste, texture, and appearance consistency, manage non-conformance reporting and CAPA implementation, oversee hygiene and sanitation standards, perform equipment calibration, support internal and external audits, and train production staff on quality and food safety practices. Key Responsibilities
Raw Materials, Packaging & Finished Product Quality Checks
- Conduct thorough quality checks on incoming raw materials, packaging materials, and finished ice cream products to verify compliance with defined specifications
- Monitor and accurately record Critical Control Points (CCPs) throughout the entire ice cream production process to ensure full compliance with HACCP, ISO 22000, and GMP standards
- Identify and reject raw materials or finished products that fall outside established quality and safety parameters, preventing non-conforming goods from reaching consumers
- Ensure all quality testing and inspection activities are conducted systematically, accurately, and in line with the company’s standard operating procedures
Sensory Evaluation — Taste, Texture & Appearance
- Perform structured sensory evaluations of ice cream batches — assessing taste, texture, colour, and appearance to ensure each batch meets the brand’s defined quality profile
- Document sensory evaluation outcomes clearly and flag any deviations from expected sensory characteristics for immediate investigation and corrective action
- Collaborate with production teams to investigate the root cause of sensory non-conformances and develop practical solutions to restore product consistency
- Maintain a comprehensive sensory evaluation log as part of the facility’s batch quality records and regulatory documentation system
Non-Conformance Management & CAPA Implementation
- Identify and formally report all quality non-conformances, production deviations, and food safety incidents in a timely and structured manner
- Coordinate with production teams to develop and implement effective Corrective and Preventive Action (CAPA) plans that address root causes and prevent recurrence
- Track the implementation and effectiveness of all CAPA actions through scheduled follow-up inspections and documented verification activities
- Maintain a complete, accurate non-conformance register and CAPA log for internal review, management reporting, and external audit purposes
Hygiene, Sanitation & Equipment Calibration
- Ensure proper hygiene and sanitation practices are consistently followed across all production, packaging, and cold storage areas of the facility
- Conduct regular hygiene inspections and swab testing to verify the effectiveness of cleaning and sanitation programmes in the ice cream production environment
- Perform periodic calibration of testing and production equipment used in quality control activities, maintaining accurate calibration records for all instruments
- Identify calibration failures or equipment deviations promptly and coordinate with the maintenance team to resolve issues and restore accurate measurement capability
Audit Support, Documentation & Regulatory Compliance
- Support internal quality audits and external food safety, ISO 22000, and local regulatory authority audits — ensuring documentation is complete and audit-ready at all times
- Maintain accurate, well-organized records of all quality inspections, test results, CCPs, non-conformances, and corrective actions for full traceability and compliance
- Ensure full compliance with local UAE food regulatory authority requirements and company quality policies across all operational areas
- Train production staff on essential quality control principles, HACCP awareness, GMP standards, and hygiene practices through clear, practical sessions on the production floor
Qualifications & Requirements
Educational Requirements
- Bachelor’s degree in Food Technology, Dairy Science, Microbiology, Food Science, or a closely related scientific discipline — essential for this QC officer role
- Additional certifications in HACCP, ISO 22000, food safety auditing, or dairy science are considered a meaningful advantage
Experience Requirements
- 3–5 years of hands-on quality control experience within the food or dairy manufacturing industry — ice cream or frozen dessert experience is strongly preferred
- Practical working knowledge of HACCP, ISO 22000, GMP, and food safety management systems in a live production environment
- UAE work experience is mandatory — candidates without verified UAE experience in a food or dairy manufacturing environment will not be considered for this position
Skills & Competencies
- Strong attention to detail with sharp analytical skills and the ability to identify quality trends, deviations, and risks quickly and accurately
- Good communication and teamwork abilities — comfortable coordinating with production, procurement, management, and external auditors
