You will take the operation from empty space to fully functioning world-class production facility, building every system, SOP, and quality benchmark yourself. From daily production management across breads, pastries, viennoiserie, and desserts to team recruitment, food cost control, inventory management, and hygiene standard enforcement — this role demands a bakery leader who has not just worked in operations, but has owned, built, and run them at the highest commercial level. Key Responsibilities
Full Bakery Setup & Launch Management
- Lead the complete end-to-end setup and launch of the bakery production operation from day one through to fully operational daily output
- Develop all production workflows, standard operating procedures, and measurable quality benchmarks across every product category
- Configure and commission production equipment, organise station layouts, and establish supply chains for raw materials and packaging
- Set the operational tone, culture, and standards from the very beginning — building a world-class facility from the ground up
Daily Production Management
- Oversee and actively participate in daily production across artisan breads, pastries, viennoiserie, and premium desserts to consistently high standards
- Manage production planning schedules, output targets, and resource allocation to ensure timely, waste-efficient operations each day
- Monitor and maintain product consistency, portion accuracy, and presentation standards across every batch and every shift
- Drive continuous product innovation while preserving the quality and consistency that defines the bakery’s identity in the UAE market
Inventory, Food Cost & Operational Control
- Own production planning and inventory management to ensure zero shortages and efficient raw material utilisation across all product lines
- Monitor and control food costs with commercial discipline — tracking wastage, yield efficiency, and supplier performance actively
- Implement and maintain accurate stock rotation, ordering schedules, and supplier relationship management systems
- Report on production metrics, cost performance, and quality outcomes to business management on a regular basis
Team Recruitment, Training & Culture
- Lead the full recruitment and onboarding process for the bakery production team — selecting the right people from the start
- Train, mentor, and develop your team around clear shared standards of quality, food safety, and operational excellence
