 Position Overview
This Food Microbiologist role is a technically comprehensive and operationally critical position within a food manufacturing company’s quality laboratory in Ras Al Khaimah. You will be responsible for the full spectrum of microbiological testing — from routine TPC, yeast and mold, and coliform testing to pathogen detection for Salmonella, Listeria, and E. coli — across raw materials, in-process samples, finished products, and environmental swabs.
In addition to laboratory analysis, you will play a key role in hygiene monitoring, sanitation verification, HACCP compliance, and supporting internal and external audits.  Job Responsibilities
Microbiological Analysis & Testing
- Perform comprehensive microbiological analysis and testing of raw materials, in-process samples, finished food products, and environmental swabs — applying internationally recognized testing protocols and laboratory methods.
- Conduct routine tests including TPC, yeast and mold, coliform, E. coli, Salmonella, Listeria, and other microbiological parameters as per specific product and regulatory requirements.
- Carry out environmental monitoring and swab testing of food contact surfaces, production equipment, and personnel hygiene to verify the effectiveness of cleaning and sanitation programs.
- Monitor and verify hygiene and sanitation standards across all production, processing, and food storage areas on a routine and scheduled basis.
Documentation & Laboratory Management
- Maintain accurate, complete, and audit-ready microbiology laboratory records, reports, and test documentation in full compliance with internal quality systems and applicable food safety standards.
- Monitor laboratory equipment calibration schedules and ensure the proper maintenance and functioning of all microbiological testing instruments and laboratory tools.
- Follow all laboratory safety practices and maintain cleanliness and organization of the microbiology laboratory area at all times.
Food Safety Compliance & Audits
- Ensure full compliance with HACCP, GMP, ISO 22000, FSMS, and all applicable UAE food safety regulations across all laboratory and production-related activities.
- Assist in internal audits, external audits, customer audits, and regulatory inspections — preparing documentation, providing evidence, and supporting the audit team throughout the inspection process.
- Support the validation and verification of cleaning and sanitation procedures — ensuring that sanitation programs are scientifically validated and microbiologically effective.
Investigations & Cross-Functional Collaboration
- Investigate out-of-specification microbiological results — conducting structured root cause analysis for contamination events and supporting the implementation of effective corrective actions.
- Coordinate closely with Production, QC, and QA teams to communicate microbiological findings, address food safety issues, and drive timely corrective action across the facility.

 Qualifications & What We Are Looking For
Education
- Bachelor’s or Master’s Degree in Microbiology, Food Science, Food Technology, Biotechnology, or a closely related scientific discipline — required
- A strong academic background in food microbiology, pathogen testing, or laboratory sciences will be given preference during candidate shortlisting
Experience & Technical Knowledge
- Proven experience as a Microbiologist in the food industry is mandatory — candidates without food industry microbiology experience will not be considered
- Strong knowledge of food microbiological testing methods and laboratory practices — TPC, yeast and mold, coliform, E. coli, Salmonella, Listeria, and environmental monitoring
- Familiarity with food safety management systems including HACCP, GMP, and ISO 22000 — and demonstrated experience applying these standards in a live food manufacturing environment
- Good understanding of contamination control and sanitation verification in food production and processing environments
- Excellent documentation, reporting, and record-keeping skills — with experience maintaining laboratory records to audit standards
- Ability to work independently and in coordination with cross-functional departments — production, QA, and QC teams
- Willingness to work on a shift basis when required in support of production schedules
