Key Responsibilities
Recipe Development & Product Testing
- Create, develop, and test recipes for cookies, wafers, chocolates, and other confectionery products
- Work with a wide range of ingredients including sugars, fats, emulsifiers, and leavening agents
- Optimize products for cost efficiency, sensory quality, and regulatory compliance
- Conduct lab-scale trials and scale-up production runs to validate new formulations
SOP Development & Process Documentation
- Develop, write, and maintain detailed Standard Operating Procedures (SOPs) for all production processes
- Establish and document process standards covering baking, casting, glazing, and packaging operations
- Maintain comprehensive product documentation including formulation records and ingredient specifications
- Review and update technical documents to ensure accuracy, compliance, and operational relevance
Quality Assurance & Allergen Control
- Contribute actively to quality assurance processes ensuring all products meet defined standards
- Implement and maintain allergen control programmes across confectionery production lines
- Manage traceability systems ensuring full ingredient and product tracking throughout the supply chain
- Support microbiological risk management processes within the production environment
Regulatory Compliance & Certification
- Ensure all products and processes comply with HACCP, ISO 22000, and relevant food safety standards
- Support HALAL and KOSHER compliance requirements where applicable to product ranges
- Participate in internal and external audits related to food safety and quality management systems
- Stay up to date with UAE, GCC, and international food regulatory developments affecting confectionery
Production Process Optimisation
- Apply in-depth knowledge of baking, casting, glazing, and packaging processes to improve efficiency
- Identify opportunities to reduce waste, improve yield, and optimise product cost without compromising quality
- Collaborate with production, procurement, and quality teams on ingredient sourcing and process improvements
- Support continuous improvement initiatives across all food technology and manufacturing functions
Qualifications & Requirements
Educational Requirements
- Degree or diploma in Food Technology, Food Science, Food Engineering, or Microbiology
- Certifications in HACCP, ISO 22000, HALAL, or KOSHER standards are a significant advantage
Experience Requirements
- Minimum 3 years of hands-on experience in bakery or confectionery manufacturing environments
- Demonstrated experience in recipe development, product testing, and food formulation
