Position Overview
This Quality Control Manager role in the UAE is a senior leadership position within a fast-growing food and beverage company that operates a central kitchen model serving multiple outlets. You will take full ownership of the organisation’s quality assurance and food safety management framework — designing, implementing, and continuously improving QC systems that cover every stage of food production, from raw material intake at the central kitchen through to final service standards at each outlet location. Beyond compliance, you will also play a key strategic role in food costing analysis and waste reduction — helping the business grow profitably while maintaining the quality standards its customers expect and trust.

Key Responsibilities
Quality Assurance & Food Safety Management
- Lead, develop, and implement a comprehensive quality assurance and food safety management framework covering all central kitchen operations and multi-outlet locations
- Establish, enforce, and continuously improve QC standards, procedures, and checklists across all stages of food production — from raw material receipt through processing, packaging, and outlet delivery
- Monitor food handling, preparation, storage, temperature control, and sanitation practices at the central kitchen and across all outlet sites on a regular, systematic basis
- Investigate food safety incidents, quality failures, and customer complaints promptly — implementing effective root cause analysis, corrective actions, and preventive measures
HACCP Implementation & Regulatory Compliance
- Design, implement, and maintain fully compliant HACCP programs tailored to the central kitchen model and the specific food categories and processes involved
- Ensure full compliance with UAE municipality regulations, Dubai Health Authority (DHA) or relevant emirate health authority requirements, and applicable international food safety standards at all times
- Plan, schedule, and lead internal QC audits and inspections — as well as host and prepare for external regulatory authority visits and third-party food safety audits
- Maintain accurate, comprehensive, and audit-ready food safety documentation, HACCP records, temperature logs, sanitation reports, and compliance correspondence
Food Costing, Waste Control & Profitability
- Monitor, analyse, and report on food cost ratios across central kitchen production and outlet operations — identifying cost inefficiencies and implementing targeted reduction strategies
- Design and manage waste control programmes across all production and service areas, tracking waste metrics and driving measurable reduction in food loss at every operational stage
- Work closely with the culinary and operations teams to optimise portion control, recipe adherence, procurement specifications, and yield management for maximum cost efficiency
- Prepare regular food costing reports and waste analysis summaries for management review, providing data-driven recommendations to improve profitability across all outlets
Multi-Outlet QC Coordination & Standards Consistency
- Develop and enforce standardised QC procedures and food safety protocols that are consistently applied across all outlet locations regardless of individual site variations
- Conduct regular QC visits, inspections, and audits at each outlet to assess compliance with company quality standards, HACCP requirements, and hygiene procedures
- Coordinate cross-functionally with operations, kitchen, and outlet management teams to resolve quality issues quickly and ensure corrective actions are implemented and sustained
- Train, mentor, and develop QC team members and outlet staff on food safety best practices, hygiene procedures, and quality standards aligned with UAE regulatory expectations
Qualifications & Requirements
Experience Requirements
- 3–5 years of proven, hands-on experience in Quality Control or Quality Assurance management within the food and beverage industry — central kitchen or multi-outlet F&B experience is strongly preferred
- Demonstrated track record of successfully implementing and managing HACCP programs, food safety management systems, and regulatory compliance frameworks in a UAE or GCC F&B environment
- Practical experience in food costing analysis, waste control management, and profitability improvement initiatives within a food production or restaurant operations context
Technical & Compliance Knowledge
- Strong working knowledge of HACCP principles, GMP standards, and UAE food safety and hygiene regulatory requirements including municipality and health authority compliance
- Familiarity with ISO 22000, FSSC 22000, or other internationally recognised food safety management system standards is a significant advantage
- Solid understanding of food costing methodologies, yield calculations, portion control standards, and waste reduction frameworks applicable to F&B operations
