Position Overview
The Quality Officer at Americana’s Protein Division in Dubai is a critical, hands-on food safety and quality control role that ensures every product moving through the processing facility meets Americana’s established quality benchmarks and food safety compliance standards. This is a role for a detail-oriented, technically grounded food science professional who is comfortable working on the production floor — conducting daily HACCP checks, inspecting raw materials, monitoring processing activities, performing product sampling and analysis, and maintaining the accurate quality documentation that underpins Americana’s food safety management system.
As Quality Officer, you will be responsible for identifying, reporting, and managing non-conforming products, executing hold and release procedures in coordination with production teams, monitoring hygiene standards across the facility, overseeing cleaning and sanitation processes, and ensuring proper use and maintenance of quality measuring devices including thermometers and weighing scales. Key Responsibilities
Quality & Food Safety Operations
- Perform daily HACCP checks across all assigned processing and adjacent areas — ensuring full compliance with Americana’s established food safety plans and documented HACCP control points
- Conduct thorough raw material inspections and verification at point of receipt — assessing supplier compliance, product condition, labeling accuracy, temperature, and specification conformance
- Monitor processing activities on the production floor to ensure continuous adherence to Americana’s quality standards and food safety requirements throughout all stages of protein product manufacturing
- Carry out product sampling, laboratory analysis, and evaluation — applying correct sampling techniques and analytical methods to assess product quality against approved specifications
- Verify product formulation and specifications throughout production — ensuring that all finished protein products meet Americana’s approved formulation parameters before release
- Ensure proper product identification, coding, date marking, and storage conditions across all processing, cold storage, and dispatch areas at the Dubai Protein Division facility
Quality Control & Non-Conformance Management
- Execute hold and release procedures efficiently and accurately — working in close coordination with production managers and section heads to minimize disruption while protecting product safety and quality
- Identify, report, and manage all non-conforming products and materials — initiating non-conformance reports, coordinating disposals, and escalating critical food safety issues to senior quality management
- Maintain accurate, timely, and complete quality control reports and records — ensuring all QC documentation meets Americana’s internal standards and audit requirements
- Monitor hygiene standards across all processing and adjacent areas — ensuring full compliance with GMP (Good Manufacturing Practice) and GHP (Good Hygiene Practice) requirements at all times
- Support and actively contribute to continuous product quality improvement initiatives — participating in root cause analysis, corrective action implementation, and quality performance monitoring activities
Monitoring, Verification & Sanitation
- Oversee and verify cleaning and sanitation processes across all processing areas — ensuring sanitation programs are correctly executed, documented, and effective in maintaining food safety standards
- Ensure proper sampling practices are consistently followed and all sample documentation is accurate and complete — maintaining sample chain of custody from collection through analysis and result recording
- Use, calibrate, and maintain all quality measuring devices including thermometers, weighing scales, pH meters, and other relevant instruments — maintaining calibration records and flagging out-of-specification equipment promptly
Requirements & Qualifications
Educational Requirements
- Bachelor’s degree in Microbiology, Food Science and Technology, Biotechnology, Agricultural Sciences, or a closely related food safety and science field from an accredited university
- Theoretical and practical understanding of food safety principles including HACCP, GMP, GHP, and product quality control in a food manufacturing environment
Experience Requirements
- 1 to 2 years of experience in food manufacturing — hands-on quality control or food safety monitoring experience in a processing or production environment is required
- Meat processing quality control experience is a significant advantage — candidates with protein processing, fresh meat, or chilled food product QC background are strongly preferred
- Working familiarity with HACCP control systems, GMP and GHP compliance monitoring, non-conformance management, and product hold and release procedures
- Experience with food safety documentation, quality record keeping, and laboratory product sampling and analysis in a commercial food production setting
