Position Overview
The Quality Specialist at Calo Dubai is a hands-on food safety and quality assurance role at the heart of the company’s production and supply chain operations. You will implement preventive quality control checks, generate daily and weekly quality performance scores and reports, conduct supplier quality audits, investigate customer complaints, monitor HACCP and sanitation programs, inspect production processes for compliance, and train teams on food safety practices. Working across a fast-paced central kitchen and food production environment, you will be Calo’s strongest voice for food safety culture — ensuring every product that reaches a customer is consistently safe, compliant, and of the highest possible quality.

Key Responsibilities
Quality Control & Preventive Monitoring
- Support the implementation of preventive quality control checks across all stages of food production, generating daily quality scores and operational highlights for management review
- Monitor operations that directly affect product quality and food safety — identifying deviations, implementing preventive measures, and minimizing food safety and quality hazards proactively
- Inspect procedures throughout the full production cycle to ensure operational efficiency and consistent compliance with Calo’s quality standards and food safety requirements
- Assure the reliability and consistency of production by monitoring in-process conditions and finished product quality against established acceptance criteria
Reporting, Documentation & Audits
- Maintain accurate, complete records of quality reports, statistical reviews, and all relevant quality documentation to support compliance and continuous improvement
- Generate weekly and monthly quality performance reports and scorecards, sharing insights with relevant stakeholders across the business
- Ensure all required audits, quality inspections, and scheduled quality activities are completed regularly and submitted on time in line with internal and external requirements
- Conduct Supplier Quality Assurance (SQA) audits — evaluating supplier performance, identifying gaps, and sharing audit findings with relevant internal teams and management
HACCP, Food Safety Programs & Compliance
- Implement and maintain food safety programs including HACCP plans, sanitation programs, temperature monitoring logs, and cleaning and disinfection schedules across all production areas
- Ensure compliance with all local UAE governmental food safety regulations, statutory requirements, and applicable international standards including BRCGS and AIB International
- Ensure all products and processes comply fully with legal, regulatory, and food safety requirements at every stage of the production and supply cycle
- Maintain work environments in a safe, hygienic, and compliant condition — identifying and correcting hygiene or food safety risks promptly and decisively
Corrective Actions & Customer Complaints
- Investigate customer complaints and product non-conformities thoroughly — conducting structured root cause analysis and supporting the effective implementation of corrective and preventive actions
- Identify quality defects, food safety issues, and recurring operational problems — recommending appropriate corrective actions to prevent recurrence and protect product integrity
- Follow established procedures to inspect, report, and escalate quality issues in a timely and professional manner across all relevant departments
Food Safety Culture, Training & Team Support
- Train and educate production and kitchen team members on food safety practices, personal hygiene standards, and quality procedures — supporting a culture of genuine food safety awareness
- Support the implementation of food quality initiatives, organizational goals, and quality improvement objectives across the Calo production operation
- Project a consistently positive image of Calo’s quality and food safety commitment to employees, customers, industry partners, and the wider community
Qualifications & Requirements
Educational Requirements
- Bachelor’s degree in Food Science, Microbiology, Chemistry, Biotechnology, Biological Sciences, or any other relevant scientific discipline
Experience Requirements
- Minimum of 3–4 years of hands-on experience in Quality Assurance and Food Safety within food manufacturing, central kitchen, catering, or food production environments
- Prior experience working in a fast-paced food production environment is highly preferred — candidates comfortable with the pace of food-tech or central kitchen operations are strongly favored
- Good understanding of AIB International (AIBI) and BRCGS food safety standards and their practical application in production environments
- Solid knowledge of local food regulatory and statutory requirements applicable in the UAE food production sector
Knowledge, Skills & Competencies
- Excellent written and verbal communication skills in English — for reporting, team training, audit documentation, and stakeholder communication
- Strong attention to detail with a results-driven, proactive approach to quality and food safety management
- Strong analytical, decision-making, and structured problem-solving skills — particularly in root cause analysis and corrective action implementation
- Ability to promote and actively maintain a strong food safety culture across cross-functional production teams
- Capable of working independently while effectively managing multiple quality priorities in a fast-moving food production environment
