Key Responsibilities
New Product Development — Concept to Commercial Launch
- Develop new and improve existing food and beverage products across the full NPD lifecycle — from initial concept ideation and formulation design through laboratory trials, factory scale-up, pre-launch studies, and final commercial product launch
- Ensure successful scaling up of NPD products from laboratory development to full commercial production — working closely with both internal and external manufacturing plants to achieve consistent, high-quality, and cost-effective scale-up outcomes
- Conduct pre-launch storage studies and shelf life evaluation programs for new products — ensuring all products meet required stability, safety, and quality standards before market launch
- Drive process development and optimization in manufacturing plants — identifying opportunities to improve consistency, efficiency, and product quality across the production processes associated with new and existing product lines
Ingredient Sourcing, Specification & Supplier Management
- Search for and evaluate new suppliers to source raw materials (RM) and packaging materials (PM) that complement JM’s existing product range — ensuring the best combination of quality, cost, availability, and regulatory compliance
- Develop and manage raw material and packaging material specifications — ensuring all new ingredients and materials used in NPD projects meet the required food safety, quality, and regulatory standards for the UAE and export markets
- Recommend packaging material selections for new products — considering functionality, shelf life requirements, sustainability, consumer appeal, and cost efficiency in all packaging specification decisions
- Maintain Certificates of Analysis (COA) and detailed specification sheets for all new ingredients in initial NPD stages — ensuring complete documentation accuracy and traceability from ingredient sourcing through product formulation
Cross-Functional Collaboration & ORACLE Documentation
- Liaise actively and effectively between the production, marketing, and quality assurance departments — translating NPD designs, consumer insights, and quality requirements into commercially viable products that meet all functional and regulatory standards
- Document and manage online modifications of recipes, routing instructions, and formulas in the ORACLE enterprise system — maintaining accurate, current, and complete NPD records across all stages of product development
- Assimilate global and regional F&B trends — translating consumer trend insights, competitive market analysis, and innovation research into compelling new product concepts tailored for the UAE and GCC food and beverage market
- Collaborate with supply chain and manufacturing teams to scale R&D product designs into fully optimized commercial production processes — driving consistent quality output and manufacturing efficiency from day one of commercial production
Recipe Optimization & Value Engineering
- Conduct ongoing recipe optimization and value engineering analysis for both new and existing products — identifying cost reduction opportunities, ingredient substitutions, and process improvements that maintain or enhance product quality and consumer appeal
- Apply strong analytical ability to formulation data, shelf life results, process parameters, and cost analysis — using evidence-based insights to drive well-reasoned NPD decisions and continuous product improvement
- Ensure compliance with all relevant food regulations applicable to products developed for the UAE, GCC, and export markets — staying current with regulatory updates and proactively addressing compliance requirements in all NPD activities
- Support the Head of NPD in planning, prioritizing, and executing the NPD project pipeline — demonstrating strong planning, decision-making, and result orientation in managing multiple innovation projects simultaneously
Qualifications & Requirements
Educational Requirements
- Bachelor of Science (B.Sc) in Dairy Technology, Food Technology, Food Science, or a closely related scientific field — required as the minimum educational qualification for this Executive Product Innovation role
- Additional postgraduate qualifications, professional development, or specialized training in product development, food formulation, or food regulations are considered meaningful advantages
Experience Requirements
- 3 to 5 years of hands-on experience in new product development, food R&D, or product innovation within the food technology, dairy, or FMCG industry — this is the preferred and targeted experience range for this Dubai-based role
