Key Responsibilities
Flavour Creation & Development
- Participate actively in the creation and development of new food flavours across a wide range of product applications including baked goods, dairy, confectionery, beverages, sauces, and pharmaceutical products
- Contribute creative ideas and technical knowledge to flavour formulation projects — developing novel flavour profiles that meet customer specifications, market trends, and OAI’s quality standards
- Support the development of custom flavours matched precisely to the taste requirements and preferences of OAI’s valued customers across local and international markets
- Assist experienced flavourists in scaling and refining flavour formulations from bench-scale laboratory development through to production-ready specifications
Sensory Evaluation & Ingredient Testing
- Conduct structured sensory analysis and evaluation of flavour samples — accurately assessing flavour profiles, intensity, balance, and compliance with target specifications throughout the development process
- Test and evaluate raw material ingredients and flavour compounds systematically — maintaining detailed records of sensory outcomes, formulation iterations, and technical observations
- Apply trained sensory evaluation skills to detect off-notes, flavour deviations, and quality issues — communicating findings clearly to the R&D team for rapid resolution and reformulation
- Participate in panel-based sensory evaluation sessions — contributing consistent, calibrated sensory assessments that support data-driven flavour development decisions
Laboratory Operations & Quality Standards
- Perform all laboratory work with precision, accuracy, and meticulous attention to detail — maintaining the highest standards of measurement, documentation, and experimental reproducibility
- Ensure strict adherence to OAI’s quality standards, laboratory SOPs, and safety protocols throughout all flavour development and testing activities
- Maintain an organized, clean, and fully compliant laboratory environment — ensuring all equipment is properly calibrated, maintained, and ready for use at all times
- Accurately document all experimental data, formulation records, sensory evaluation results, and quality observations in accordance with OAI’s R&D documentation requirements
Cross-Functional Collaboration & Research Support
- Work closely and collaboratively with cross-functional teams within OAI — including production, sales, and quality — to support smooth flavour project delivery from development to commercialization
- Support research initiatives and technical projects that advance OAI’s flavour development capabilities and strengthen its competitive position in the GCC food flavour market
- Engage proactively with customers and sales teams to understand client flavour requirements and translate briefs accurately into targeted laboratory development activities
- Contribute to the continuous improvement of OAI’s flavour development processes, raw material knowledge base, and sensory evaluation methodologies
Qualifications & Requirements
Educational Requirements
- Bachelor’s degree in Chemistry, Food Science, Food Technology, or a closely related scientific field — required as a minimum educational qualification for this Junior Flavourist position
- Relevant certifications in sensory science, flavour technology, or food quality management are considered a meaningful advantage and warmly welcomed in applications
Experience & Knowledge Requirements
- Experience or academic background in Research and Development (R&D) within the food flavour, food ingredient, or broader food science industry is strongly preferred
- Familiarity with the food flavour and food technology industry — including basic knowledge of flavour compounds, ingredient functionality, and food application requirements across key product categories
- Previous laboratory experience in food science, chemistry, or flavour-related analytical or formulation work is considered a significant advantage for this Muscat-based role
