 Key Responsibilities

HACCP Implementation & Critical Control Point Monitoring

  • Apply full HACCP Level-4 knowledge to implement, monitor, and document all critical control points across catering and food preparation operations on remote ADNOC rig sites
  • Conduct scheduled and unannounced HACCP audits to identify food safety risks, non-conformances, and opportunities for continuous improvement across all catering areas
  • Maintain complete and accurate HACCP records including hazard analysis worksheets, CCP monitoring logs, and verification reports in full compliance with UAE food safety frameworks

Hygiene Inspections & On-Site Compliance Enforcement

  • Perform daily and routine hygiene inspections across all food preparation, cold storage, serving, and waste management areas on both onshore and offshore ADNOC rig sites
  • Enforce strict personal hygiene standards for all catering personnel including proper PPE usage, correct handwashing procedures, and approved food handling practices at all times
  • Document all hygiene inspection findings, prepare detailed non-conformance reports, and ensure all corrective and preventive actions are followed through to full and timely closure

Food Safety Training & Catering Team Development

  • Plan, deliver, and document regular food safety and hygiene training sessions for all catering staff, covering food contamination prevention, allergen management, and emergency response procedures
  • Conduct comprehensive food safety inductions for all new catering team members before they commence any food handling activities on remote rig sites
  • Drive a genuine food safety culture through proactive team engagement, practical toolbox talks, and targeted awareness activities suited to the remote rig environment

Regulatory Compliance, Audit Support & Reporting

  • Ensure all catering operations fully comply with UAE food safety regulations, ADNOC client specifications, and applicable international food safety management standards at all times
  • Support internal and external food safety audits and inspections, ensuring all findings are properly addressed and closed within agreed timelines
  • Prepare and submit professional food safety compliance reports, audit outcomes, and incident documentation to management with clear, prioritized recommendations for improvement

 Qualifications & Requirements

Educational Requirements

  • Graduate degree in Food Science, Microbiology, Public Health, or a closely related scientific discipline is required for this position
  • A strong academic and applied understanding of food safety principles, applied microbiology, and hygiene management practices is essential

Experience & Certification Requirements

  • Minimum 2 years of hands-on catering experience within the UAE or any Middle East country — direct experience with institutional or remote site catering is highly valued
  • Complete certification in HACCP Level-4 and Food Safety Level-4 is required — candidates who have not yet completed certification will be required to do so after joining the organization
  • NEBOSH certification is a strong competitive advantage; candidates without NEBOSH may be asked to complete the course following commencement of employment
