Position Overview

This Food Safety and Hygiene Supervisor role at Oaks Hotels Dubai is a senior compliance and leadership position at the heart of a world-class 5-star hospitality operation. You will maintain and upgrade sanitation standards across all food service areas, manage the full HACCP food safety system, lead bi-monthly self-audits, implement corrective actions, coordinate hygiene support across all departments, and deliver targeted training to food handlers throughout the hotel.  Key Responsibilities

Sanitation & Hygiene Standards Management

  • Maintain and continuously upgrade sanitation and hygiene standards across all hotel food service areas
  • Ensure all food provided to hotel guests and staff is free from contamination at all times
  • Propose and enforce minimum hygiene requirements for workspaces, storage, receiving, and waste disposal areas
  • Implement best hygiene practices and take prompt corrective actions wherever standards fall below requirements

HACCP Food Safety System Management

  • Manage the hotel’s complete HACCP food safety system with rigorous attention to documentation and data accuracy
  • Consolidate food safety data, handle customer complaints, and communicate critical findings to management and HODs
  • Lead and conduct bi-monthly self-audits in full accordance with HACCP standards to ensure best practices
  • Assist in implementing corrective actions and ensure verification and closure of all inspection and audit findings

Food Handler Training & Team Development

  • Conduct targeted training sessions for food handlers in collaboration with departmental heads and process owners
  • Enhance the overall food safety competence and hygiene awareness of the entire hotel food service team
  • Provide ongoing guidance and support to all team members on hygiene practices, EHS protocols, and safe food handling
  • Build a strong culture of food safety accountability and awareness across all food-related hotel departments

Coordination, Compliance & Record Maintenance

  • Coordinate with all department heads to provide necessary hygiene support and resolve compliance issues promptly
  • Efficiently maintain all records related to the hotel’s sanitation, hygiene programs, and food safety activities
  • Ensure full compliance with Dubai Municipality food safety requirements and UAE food safety regulations
  • Manage microbiological sampling results and coordinate with relevant departments to address identified risks

 Qualifications & Requirements

Educational Requirements

  • Diploma or Bachelor’s degree in Food Science, Food Technology, or a closely related discipline required
  • HACCP Certification, Certified Professional in Food Safety (CP-FS), and Environmental Health and Safety Certification required

Experience Requirements

  • Minimum 3–5 years of experience in food safety and hygiene within the hospitality or restaurant industry in the UAE
  • Strong hands-on knowledge of HACCP, UAE food safety regulations, and Dubai Municipality compliance requirements
  • Demonstrated experience in conducting food safety audits, implementing corrective actions, and delivering staff training
