- Plan and coordinate batch production according to outlet requirements, event orders, delivery schedules, and forecasted demand — balancing efficiency, quality, and resource utilisation across the full production day
- Manage workflow seamlessly across all production stages — mixing, proofing, baking, cooling, finishing, packing, storage, and dispatch — ensuring smooth, uninterrupted production flow throughout each shift
- Ensure all products are produced consistently and in full compliance with approved recipes, portion specifications, and quality standards — maintaining the artisanal character of the brand at high-volume production scale
Team Leadership, Training & Development
- Supervise and coordinate a large production team — including bakers, pastry chefs, cake decorators, bakery assistants, packers, and production support staff — allocating daily tasks and monitoring productivity, attendance, and performance
- Train team members comprehensively on recipes, baking techniques, equipment use, quality standards, hygiene procedures, and food safety requirements — building a skilled, consistent, and motivated production workforce

Quality Control & Product Consistency
- Conduct regular, systematic quality checks on product texture, appearance, weight, taste, finish, shelf life, and packaging compliance — ensuring every item leaving the CPU meets the brand’s quality specifications without exception
- Identify, report, and immediately correct any non-compliant products — implementing root cause analysis and corrective actions to prevent recurrence of quality failures across production batches
- Maintain absolute consistency across all bakery items supplied to outlets and external clients — managing the critical challenge of delivering artisanal product quality at high-volume production scale
- Work closely with the Head of Bakery to continuously improve recipes, refine production methods, optimise yields, and enhance product presentation in line with evolving brand and market requirements
HACCP, Food Safety & Hygiene Compliance
- Ensure full, rigorous compliance with HACCP principles, UAE municipality food safety regulations, international food safety standards, and all internal hygiene policies across every area and activity within the bakery CPU
- Monitor and manage temperature controls, storage procedures, expiry date management, product labelling, allergen control systems, and structured cleaning schedules — maintaining audit-ready compliance at all times
- Ensure all team members consistently follow personal hygiene requirements, uniform standards, and safe food-handling practices — conducting regular food safety training and hygiene briefings to maintain compliance awareness
- Maintain accurate, complete production records for production logs, cleaning schedules, temperature monitoring, wastage reports, goods receiving documentation, and full batch traceability — ready for internal and external audit at any time
Inventory, Cost Control & Wastage Management
- Monitor ingredient usage, stock levels, production yields, and wastage on a daily basis — identifying inefficiencies and implementing practical measures to reduce waste and improve cost performance across the bakery operation
- Coordinate proactively with procurement and stores teams to ensure all raw materials, ingredients, and packaging supplies are available ahead of scheduled production runs — preventing costly delays or shortfalls
- Minimise wastage through disciplined production planning, accurate demand forecasting, correct FIFO stock rotation, appropriate portion control, and effective management of production volumes against outlet orders
- Support recipe costing, product costing, and margin control activities — providing the Head of Bakery and management with accurate production data that supports informed financial decision-making across the bakery portfolio
Equipment Maintenance & Facility Management
- Ensure all bakery equipment — ovens, mixers, proofers, blast chillers, refrigerators, freezers, sheeters, and other production machinery — is operated correctly, safely, and efficiently by all team members at all times
- Monitor the condition of all production equipment proactively — reporting maintenance issues promptly and coordinating with the maintenance team to minimise downtime and ensure maximum production availability
- Ensure proper cleaning, care, and preventive maintenance of all production equipment — extending equipment life, ensuring food safety compliance, and protecting the quality and efficiency of the entire bakery operation
Required Experience & Qualifications
Experience Requirements
- Minimum 5–7 years of hands-on bakery production experience — with at least 2–3 years in a supervisory or managerial role leading a production team in a high-volume bakery environment
- Proven experience in a bakery CPU, hotel bakery, high-volume artisan bakery, central kitchen, or premium F&B production environment — direct central production unit management experience is strongly preferred
- Strong, comprehensive knowledge of breads, enriched doughs, pastries, viennoiserie, cakes, desserts, and bakery production processes — a genuine craft and technical understanding of the full bakery product portfolio
