Position Overview
The Quality Assurance Officer at Joud Coffee is responsible for the end-to-end quality integrity of all food products produced, dispatched, and delivered from the company’s central kitchen and across its restaurant network. This is a hands-on, operationally comprehensive role covering daily pre-dispatch sign-off, CCP and oPRP monitoring, incoming goods inspections, cold chain verification, allergen and labelling compliance, supplier quality management, and delivery of structured food safety training — all while maintaining full operational readiness for ADAFSA and Dubai Municipality regulatory inspections at every Joud Coffee location.

Key Responsibilities
End-to-End Production Quality Checks & Pre-Dispatch Sign-Off
- Conduct comprehensive quality checks across all production stages — from raw material receipt through preparation, portioning, packaging, and dispatch — ensuring no non-conforming product leaves the kitchen
- Perform and sign off on daily pre-dispatch quality inspections, verifying that all products dispatched to Joud Coffee outlets fully meet defined brand quality standards
- Monitor and verify portion weights, appearance, texture, and taste of all products against approved product specifications and brand quality benchmarks
UAE-Compliant Labelling & Allergen Verification
- Verify that all dispatched products are correctly labelled in full compliance with UAE food labelling standards — covering nutritional values, allergen declarations, production date and time, expiry, and storage temperature requirements
- Ensure strict allergen control across all production areas — monitoring segregation, cross-contact prevention, and allergen declaration accuracy on all Joud Coffee products
- Maintain up-to-date product specification sheets and labelling records audit-ready for ADAFSA and Dubai Municipality inspections at any time
Cold Chain, Temperature Monitoring & Logistics Coordination
- Oversee temperature monitoring and full cold chain verification for all chilled and frozen products during storage and dispatch from the central kitchen
- Collaborate closely with logistics and dispatch teams to ensure correct product handling, temperature maintenance, and delivery timelines are consistently met across all UAE outlets
- Escalate cold chain deviations immediately and initiate product holds and corrective actions to protect product safety and brand integrity
GMP, HACCP & CCP Monitoring
- Ensure the consistent daily application of Good Manufacturing Practices (GMP) and HACCP principles across all central kitchen and restaurant operations
- Monitor all Critical Control Points (CCPs) and operational Prerequisite Programs (oPRPs) on a daily basis — immediately escalating deviations and initiating corrective actions and product holds as required
- Assess the hygiene and sanitation of kitchen equipment, food contact surfaces, utensils, and food contact materials — validating that cleaning and disinfection schedules are executed correctly and at required frequencies
Incoming Goods Inspections & Supplier Quality Management
- Conduct structured incoming goods inspections covering supplier delivery conditions, product freshness, packaging integrity, temperature compliance, and certificates of conformance — rejecting or quarantining all non-conforming deliveries
- Work collaboratively with the procurement team to clearly communicate quality expectations to suppliers and support periodic performance evaluations against defined quality KPIs
- Maintain detailed supplier quality records and inspection reports to support ongoing supplier approval and performance monitoring processes
Food Safety Training & ADAFSA Regulatory Compliance
- Design and deliver structured food safety induction programmes for all new kitchen and restaurant staff — assessing comprehension before commencement of any food handling duties
- Ensure full and ongoing compliance with UAE food safety regulations (ADAFSA and Dubai Municipality) across all Joud Coffee locations at all times
- Maintain complete operational readiness for regulatory inspections — ensuring documentation, records, CCPs, cleaning schedules, and staff competencies are audit-ready across the entire outlet network
Qualifications & Requirements
Educational Requirements
- Bachelor of Science (BSc) degree in Food Technology, Food Science, Hotel Management, Nutrition, or a closely related field — mandatory for this role
- Additional professional qualifications in food safety management or quality assurance within the F&B or hospitality sector are a strong advantage
Experience Requirements
- Food Safety Management System Certification — mandatory
- HACCP Certification — required for this role
- ISO 22000 Food Safety Management System knowledge and certification — required
- ADAFSA-recognised food safety qualifications or equivalent UAE food handling certifications are a significant advantage
Essential Skills
- Strong interpersonal and communication skills — able to train, influence, and engage kitchen and restaurant staff at all levels across multiple UAE outlets
- Excellent problem-solving skills with a proven ability to identify root causes and implement effective corrective actions in a fast-paced food production environment
