Position Overview
The Restaurant Manager at Wynn Al Marjan Island leads daily F&B operations across one of the UAE’s most prestigious resort dining environments. You will manage everything from pre-arrival guest preparation and VIP profiling to floor leadership, financial performance monitoring, team coaching, and revenue optimization. Every decision you make directly shapes the guest experience and upholds Wynn’s Four Pillars of service excellence. Key Responsibilities
Daily Restaurant Operations & Service Excellence
- Manage daily restaurant operations in full alignment with Wynn SOPs and service standards, ensuring proactive operational readiness rather than reactive problem-solving at all times
- Deliver consistently high-quality, intuitive guest service ensuring every interaction meets Forbes Travel Guide 5-Star expectations across all dining service touchpoints
- Actively engage with guests on the floor, anticipating their needs before they are expressed and resolving any feedback with grace, empathy, and swift action
- Conduct daily pre-shift briefings integrating pre-arrival guest insights from reception, ensuring the entire team is fully prepared to anticipate and exceed guest expectations
Guest Experience & VIP Management
- Collaborate closely with the Reception team on pre-arrival awareness by reviewing guest profiles, VIP lists, and special requests to enable seamless, personalized service execution
- Handle all guest feedback and complaints with genuine empathy and appropriate urgency, ensuring effective resolution, service recovery, and lasting positive impressions
- Monitor guest satisfaction metrics and service performance indicators, implementing targeted continuous improvement actions to consistently raise the dining experience standard
Team Leadership, Coaching & Development
- Lead, inspire, and coach restaurant supervisors and front-of-house service team members to embody Wynn’s Four Pillars of excellence in every single guest interaction
- Build a motivated, high-performing dining team through consistent mentoring, clear expectations, structured feedback, and a culture of genuine hospitality professionalism
Financial Performance & Revenue Optimization
- Monitor daily financial performance including sales mix, labor cost, and productivity indicators, translating all operational decisions into measurable, strong financial outcomes
- Contribute actively to business planning, revenue initiatives, and operational strategies that anticipate guest demand patterns and maximize overall profitability
- Support inventory management, cost controls, and full compliance with financial policies — overseeing labor, inventory, and controllable expenses within approved budgets
- Optimize revenue through effective management of table turn time, seating strategy, yield management, and proactive demand planning aligned with resort-wide goals
Operational Reporting & Strategic Planning
- Prepare and present clear, insightful operational reports, findings, and strategic recommendations directly to the General Manager on a regular basis
- Demonstrate strong commercial awareness and the ability to translate operational decisions into tangible financial outcomes that support the resort’s overall revenue strategy
Qualifications & Requirements
Educational Requirements
- Secondary school diploma or above is required; a Bachelor’s degree in Hospitality Management or a related field is a significant advantage for this position
- Proficiency in MS Office, AI tools such as Co-Pilot, and Point of Sale (POS) software systems used in luxury dining environments
Experience Requirements
- A proven track record of 3 to 5 years in luxury or high-volume dining management is essential, demonstrating the ability to lead with precision, composure, and guest-focused excellence
- Experience with Forbes Travel Guide 5-Star service standards is strongly preferred; familiarity with SevenRooms reservation management is an additional advantage
- Measurable F&B product knowledge with demonstrated budgeting, cash handling, and financial performance management experience
Essential Skills
- Excellent leadership, management, and supervisory abilities with a natural ability to inspire large dining teams in high-pressure luxury environments
- Customer service oriented with outstanding verbal and written English communication skills; proficiency in a second language relevant to the restaurant’s guest demographic is preferred
