Position Overview
This Food Safety & Quality Specialist role at Talabat’s tMart in Dubai is a high-visibility, multi-dimensional position that combines regulatory compliance, operational food safety, health and safety programme management, product quality oversight, and cross-functional team collaboration. The successful candidate will act as the primary point of contact for food safety and quality management — conducting food and health safety inspections, delivering training, managing customer complaint escalations, coordinating product withdrawals and recalls, monitoring regulatory developments, and supporting product assortment quality across own-branded and private label items. The role also encompasses coordination of external laboratory testing, mystery shopper programmes, product sampling, supplier audits, and labelling compliance. Key Responsibilities
Food Safety Inspections & Regulatory Compliance
- Conduct food and health safety inspections and investigations by compiling and analysing data on potential hazards and unsafe conditions
- Ensure full execution of all local food safety authority enforcement actions and maintain ongoing regulatory compliance
- Monitor regulatory developments with potential impact on local business entities and initiate internal measures accordingly
- Liaise between operations and the legal team as required — acting as the primary POC for food safety and quality management
Training, Education & Food Safety Culture
- Ensure all employees receive the designated food safety and quality training across tMart’s Dubai and regional operations
- Deliver, share, and maintain training materials, templates, and standard operating procedures for all relevant staff
- Highlight procedures requiring review due to operational or regulatory changes and communicate updates clearly to teams
- Foster a strong, proactive food safety culture across all levels of the tMart grocery and cloud store operation
Product Quality, Recalls & Complaint Management
- Support in resolving serious customer complaint escalation processes at the local Dubai level professionally and efficiently
- Coordinate withdrawals and recalls of products and manage serious food safety incidents in line with regulatory requirements
- Support food safety and quality of product assortment — including own-branded and private label items across tMart categories
- Coordinate external laboratory testing, maintain documentation for food products including product specifications and approvals
H&S Programme Execution & Audit Support
- Execute the full Health and Safety inspection programme and be actively involved in audits and corrective action close-out
- Communicate regularly with staff to keep teams informed of H&S priorities, developments, and compliance requirements
- Support investigations into workplace accidents, near misses, and other safety reports across store and hub locations
- Deliver H&S training — presenting technical information clearly and persuasively to non-technical audiences across operations
Reporting, Sampling & Supplier Coordination
- Provide regular food safety and quality reports to relevant business stakeholders to support management review and objectives
- Execute mystery shopper and product sampling programmes at tMart store level to validate in-store quality standards
- Manage supplier information requests, supplier audits, product labelling, and nutritional information compliance documentation
- Collaborate with local and central departments to achieve business food safety objectives across the tMart expansion markets
Qualifications & Requirements
Educational Requirements
- Bachelor’s degree in Food Science, Food Technology, Environmental Health, or a closely related food safety discipline
- HACCP qualifications and H&S certifications are highly valued for this multi-disciplinary food safety specialist role
Experience Requirements
- Minimum 3 years of experience managing food safety, quality, and health and safety in retail grocery, foodservice, or manufacturing
- Demonstrated ability to conduct risk assessments, hazard identification, and evidence-based risk mitigation recommendations
- Experience engaging and interacting directly with food safety authorities and regulatory bodies in the UAE or GCC
- Programme management experience across multiple store locations in a high-growth, multi-site retail or delivery environment
Essential Skills
- Current and maintained knowledge of HACCP principles and UAE/GCC food safety legislation and standards
- Strong communication skills — able to present technical food safety information clearly to non-technical audiences
- Experience leveraging technology to manage food safety processes, reporting, and programme compliance
- Strong organisational skills and the ability to manage competing priorities across a fast-paced, multi-market environment
- Knowledge of local and regional food safety laws, regulations, and food trading standards applicable in the UAE
